After making (and eating) gazpacho nearly every night for two weeks, I think I've hit upon the perfect blend:
2 Kirby cucumbers
6 or so cherry tomatoes
1 or 2 yellow peppers
1/4 avocado
1/2 clove garlic
1/2 tsp. fresh ginger
juice from 1/4 lime
fistful of cilantro
tsp. sea salt
tsp. hot chili pepper

You totally don't need a wonder-blender to make nut milks - I use my basic Oster and it works just fine. I take about a cup of almonds (after soaking them overnight) and blend them with a pinch of sea salt, some dates or agave, and about 4 cups of water. Then I strain it using a cheapo strainer I got at a dollar store years ago and a square of cheesecloth. It was also fine (to me) straining it without the cheesecloth, but my boyfriend wanted it completely grit-free. Ani Phyo's mylk recipes don't call for any straining, so you could go ahead and make nut milks even if you don't have a strainer.
I just read in Renee Underkoffler's book that you can reuse the ground nuts - just use less water to get the desired richness.
