I'm WARNING ya.. I LOVE to write!!! lol
I'm a 47 year old Personal Chef ( I turn 48 on Oct 1st). I'm told I still look like I'm in my 30's ...so If thats true..Thanks Mom & Dad for those Colombian/Panamanian genes! Ok.. I KNOW I look waaaay younger than my age!! lol But..I've had to LEARN to be Darn PROUD of my age ( until recently, I only admitted to 31-33!! lol).. I've EARNED & OWN UP to EVERY SINGLE Month and Year, that I've lived!!! :-) Not easy in "youth obsessed" America.. where I have noticed slight attitude changes when I admit my REAL AGE to people I just meet or ones who I've known for awhile!!

Recently enlightened & new to Raw foods after a couple years of "off and on" Vegetarianism, ONE of my goals/aspirations is to transition to being a Raw Chef eventually...I'm on a raw food journey, where I am intent on reversing my Diabetes and getting into healthy shape again!

I currently reside in Middletown, CT, where I live alone with my 10 year old Pomeranian, "Pookie". She is THE love of my life!




I've had SO many "Highs and lows" & experiences in my life. I could write SEVERAL books on the different chapters... I already have SOME of the titles!! "Dysfunctional Childhood - Abuse to Mom's Schizophrenia", "Teen Trauma", " Stung By the Show Biz Bug" , "The Drug Addiction years" ,"From Prozac to Topamax & Everything In Between", "Dysfunctional Loves & More", " But Everybody LOVES a FAT Chef, don't they?", "Diabetes 101", " Transformation, Is that REALLY Me?", "Miami Trips & Europe.. on Cloud 9", "Oh no.. Not AGAIN", "Raw..REALLY???" & hopefully my best chapter/book: "Success For Life..FINALLY !!" :-)

I'm not going to get into the "deeper" aspects of my life ..There are more appropriate support venues for that! But here's the "skinny" of my Life Journey so far...

I was born into a Hispanic Family, so food was a HUGE part of our lives! My mother was an Unconditional Loving Free Spirited Beauty from Panama, who was also a singer on the radio in her country.. eventually fell in love w/my Father, a Colombian Air Force Pilot, who brought her to America...

I inherited my mothers singing ability.. but not her amazing beautiful voice.. I started out "my performing career" in Theater ( Hartford Stage Company), during high school.,.From ages 18-22, I was a vocalist in a couple of blues/jazz bands & thru my 20's to mid 30's, I would do the jazz club/piano bar circuit singing blues, standards, jazz/torch songs, etc. Singing fulfilled my "never ending" desire for praise & the void in my life, for love, approval & acceptance ...NOTHING compared to the adrenalin rush & enveloping warmth I felt, from the sound of applause!! Here are some publicity "promo" posters from my wall, Circa 1980 & 1985, ages 19 & 24.





I was never athletic & tended to be shapely but never fat/obese..To be honest.. my eating was atrocious.( late night, emotional eating & I ate EVERYTHING on my plate... Fried Foods, Red meats, junk foods... u name it.. if it tasted good.. it was IN MY MOUTH!).. I was Ignorantly CLUELESS about nutrition & acted like I didn't care!! It didn't help that I was an INCREDIBLE cook... I cooked for EVERYONE!! ( Taste testing all the way thru AND After)..

It wasn't until my 30's, that I started the Yo yo'ing up & down weight from 160-to almost 200lbs. My self esteem and poor body image was at its all time LOW & it was affecting my "singing career"..I became self conscious about my appearance..my confidence swayed & I eventually stopped gigs & tapered off performing all together.. except for the occasional Karaoke to keep me vocalized. By the time I was approaching 40, I was Obese, well over the 250lb mark( I'm 5'8" barefoot)..I was always a "clothes horse"... loving fashionable stylish clothes.. but the bigger I got, the more difficult it became finding NICE styled Plus size clothes in stores( They've come a long way in the last 5 years!) For over a decade, ALL I wore was black.. You'd think I was in mourning.. which in a way I was! I NEVER wore anything w/ color, afraid It would attract attention to that Really fat person, even more.... :-(

I NEVER took pics ..except for the mandatory vacation ones..& even then, I would LITERALLY HIDE my "HUGE Butt" behind whoever I was in the pic with! ( see pics) I would be SO SHOCKED everytime I saw pics of myself... in the mirror, 1/2 delusional, 1/2 denial ... but in truth I HATED myself! I was so ashamed and miserable at how I had "let myself go"!.. I NEVER thought I could ever be one of those smiling happy before & after success stories I used to see on TV & cry over! I suffered severe depression & mood swings..I was diagnosed w/ clinical depression and even bi-polar.. From about age 33 till I was 44, I was given a slew of anti-depressions( Zoloft, Paxil, Wellbutrin, Prozac, ect) & up till 2004, I was on mood stabilzers( Topamax). I was horrendously miserable.. but I NEVER let anyone see this side of me.. To my friends and family, I was ALWAYS the cheery happy bubbly funny.. "Mandi"!

I SWORE I would NEVER show these pics to ANYBODY!! ( embarassment..my vanity...insecurity??) But after seeing such honest struggles and success stories on here.. I realized I HAVE to completely "strip myself bare", bite my pride & show em( HUGE STEP for me!!), especially if I can inspire or help anyone in my situation out there!. I had to dig them out of a box in storage & snap them w/ my digital ( so excuse the blurry/ grainy conditions.. I'm the one on the LEFT .. except for the ones where I'm HIDING behind my niece & nephew!!)



By the time I was 42, I was over 270lbs & a size 24( 4x).. On Feb 26th, 2003 ( I'll NEVER forget that date!), I was diagnosed w/ Type 2 Diabetes ( Gee I wonder why??) I was devastated.. So I figured, I could either go into a depression funk, wallow in self pity or FINALLY DO something about it!! THAT was my "Rock Bottom"! THAT was IT... Something SNAPPED & I was soon on a "ROLL"!

I started Hitting the gym obsessively EVERYDAY, like a madwoman ( no trainer or classes) & gave up carbs. I was absolutely driven and determined to get the weight off & Diabetes OUT of me!! I eventually lost close to 100 lbs, down to a size 10 by Summer of 2004!! My blood sugar was totally normal & weeeeeee..No more meds!! I literally sweated and dieted the Type 2 Diabetes OUT OF ME!! I totally transformed into a different person.. All of a sudden I had a Small waistline, cheekbones and an Hourglass figure!! WHO KNEW??.

I felt like I was 18 years old again.. except I looked waaaay better than I ever had in my life & I was almost 44 years old! For the first time, in a VERY LONG time.. I actually FELT "pretty" again. Maybe its the good genes or the fact that I religiously massaged myself w. cocoa butter and oils every nite, or my bi-weekly massages... but I swear there are no visible stretch marks on me anywhere & my skin eventually "tightened/toned" up!! ??? My masseuse at the time was amazed & so was I !!

Friends I hadn't seen in years, swore I must have had lipo, tummy tucks & a new boob job!.. I assured them I hadn't! The only cosmetic work I had EVER done in my life was having my breasts augmented when I was living in NYC at the age of 20 & then again when I was 30( 13 YEARS before).. but because I had become so heavy.. You COULDN"T Even TELL!!!

All of a sudden, I was getting MAD attention everywhere I went! This was sooooooo alien to me.. & from REALLY Hot Guys LESS than 1/2 my age!!?? It was like I made decades dissapear!! I have to admit.. the attention was Intoxifying & I LOVED IT.. I couldn't get enough!!!! ..I became OBSESSED w/ taking pictures.. I couldn;t believe the image staring back at me .. was ME!! I had ENERGY for DAYS.. so that same year & now a Platinum Blonde, it was time for a 3 week trip back to Miami, to surprise my friends .. ( see pics!)



I became a sun worshipper again, after years of "low self esteem" & hiding my body.

After my "one & only" botox injections to get rid of some sun wrinkles I had developed on my forehead, from my "OVER" Sun Exposure in Miami & the 2 months prior trying to achieve the "Base Tan", I was off & ready to go on a SOLO whirlwind European trip for 7 whole weeks in late 2004!! (Spain, Italy & Greece) I was Fearless ( Or more like a "Manic Bi-Polar" State!!!! lol) I celebrated my 44th birthday in Mykonos, I explored & walked from one end of the city to the other(Barcelona, Rome & Athens) & languished in the sensual Greek islands & partied like it was 1999!!!

Greece seemed familiar to me.. Deja Vu.. as if I had been there in a prior lifetime.. I knew my way around Athens, Mykonos & felt such a spirtual epiphany on the uninhabited sacred island of Delos.. It was truly magical.. Europeans were so wonderful to me & the men were much more vocal & "appreciative", than I was used to back home.. lol!!! Oh My God..I know it sounds superficial, but having male attention EVERYWHERE I went & being told I was actually "Beautiful" & "so sexy"... absolutely made me feel desireable, loved, wanted, & YOUNG again.. It was shocking after wasted YEARS of low self esteem & being known as the fat one!

After a full month in Greece, I CRIED when I had to come home again.. hugging everyone at my favorite Taverna... receiving a bottle of native Greek wine for my trip. One of the hardest things I ever had to do was saying goodbye to a couple of loves, I had grown attached to.. Sasha & Giannis... Or waving goodbye from the port, as the ferry sailed away my cherished actress friend Esmee, back to Amsterdam...whom I had met on the island of Santorini & with whom I had spent 4 glorious days with in Mykonos!

My whole European experience was like a dream.. the kind you hated waking up from... Like a movie..I would have wanted to watch over and over and over...I came back a size 8..bringing my weight loss total to OVER 100lbs!! ( Can't show ya the nude beach pics from Mykonos & Santorini! lol)



Back home to Reality, just in time to vote OUT Bush, that November of 2004... Yeah RIGHT!! It was anti climatic being back home..after having a different life in Europe for almost 2 months..I found myself slipping/ "crashing" into slight depression and eating unhealthy again...not as bad as my Obese years.. but just not as conscientious of how I SHOULD have been. My psyche meds weren't working and I was feeling unfullfilled and restless,, Instead of hitting the gym, when I got back home.. I started feeling myself slowly gaining weight & hibernating,,,I was conscious/aware of it happening,. yet I did nothing to stop it..

By 2006, after a couple of colonics, I told myself I wasn't putting anymore JUNK in my body.. it was defeating the purpose of colonics to begin with!! I became 100% organic & a vegetarian/vegan & started doing carbs again. I gave up ALL my Psyche meds & became anti-toxins/chemicals! I THOUGHT I was eating healthy( ALL/Mostly Organic, , no animal/ dairy, no fried foods, only whole /multi grain breads/crackers, no white flour, etc..) Then late last year, I started doing seafood.. then eventually dairy .. then poultry around June of 2008... Though I was feeling better & hadn't felt depressed, Sizes 12, 14 & 16 started creeping up again..little by little!



By late 2007, I had to start taking my dreaded Diabetes meds again, since my blood sugars were rising!

I made a 2nd trip to Italy in Late Sept, 2007. My Sister Diana & her daughter( my beautiful 19 year old neice) Amanda ( Named after yours truly!!).. were going to Italy & wanted me to go with them.

We met in Rome & I showed them the sights, ruins, the WHOLE city & then we eurorailed our way for 2 weeks to Cinque Terre ( The Italian Riviera), Florence, Venice ( part 2 of my next slide show!) & back to Rome,, I had a great time exploring this beautiful country w/ my family! The following slideshow has the majority of our Italian Trip..

Since I was the designated photographer, there weren't many pics of me.. besides I was up to a size 16 , & I wasn't feeling my most "photogenic"!! (They say that size 14-16 is the average "American Woman size"..but does that mean its healthy???) Tho it was great seeing my family & Italy again.. It was a "DIFFERENT" kind of European vacation this time.. Not as "whirlwind" and "hedonistic" as my prior visit...Just click on both of them, atthe same time, to give ya a quick overview of my trip!





I am currently up to a size 18 & NOT very happy about it... My energy level has slowed down & I haven't hit the beach OR taken pics much this year! I'm freaked out at the fact that I've thrown away all my "fat clothes"( sizes 18 & up) BUT I REFUSE to buy my current size 18 or higher ( I get away with it, by usually wearing lose clothes..baggy t-shirts, sweats, stretch waist long skirts & baggy gym wear)..



A couple of years ago on one of my trips down to FL, my friend Lissa from Boca, had let me borrow her book " Living Foods for Optimum Health" by Brian Clements,. It made alot of sense about food & was very informative ..so..I eventually got my own copy. It was the 1st time I'd ever heard of the term "raw foods".. But frankly, I wasn't ready to give up "cooking".. But After seeing the 10 part video called "Eating" recently , that Lissa sent me from youtube, I realized I needed to do something healthier, before I gain ALL my prior weight back..Thank You Lissa for keepng the "raw idea" in the air!

I ordered & saw the "Raw for 30 days-reversing Diabetes" & "Raw For Life" Dvds & became even MORE determined and enlightened! So on August 14th, 2008, I gave up seafood, poultry & dairy ..along w/ all cooked foods ... Completely 100% RAW and JUST started working out again... One thing I've learned about myself is that, I am one determined individual with the potential of relentless discipline.. once I set my mind & focus on something! I feel like I've woken up from that "fog " once again!

Though I suffer from poor self body image, I am trying to learn how to love myself more and more..You ever notice how Loving others is sometimes easier than TRULY loving yourself!

(Stay tuned for "after" pics. once I start losing weight!! Positive thinking Amanda.. lol) I wanna get back to my former sleeker sexier self & STAY THERE This time... HEALTHIER & HAPPIER than ever!!!!! :-)

I have known NOTHING but COOKING my whole life!! I'm ONE HELL of a cook!! "Cook" being the operative word.There were only a few choice moments of praise/affirmation in my life that greatly affected my self esteem.. My singing, my cooking & when I lost all that weight. am in the process of Re-training /Erasing everything I have known about heating /cooking food, exploring recipes/preparation methods & tweaking my creative recipes into Raw meals for myself and my future raw food clients!

I started Buddhist meditation 6 months ago & my thirst for knowledge & journey for self awareness and betterment,, is Insatiable!

Ya know... protruding cheekbones, a shrinking waistline, increased male attention & an improved sex life are GREAT! .. But this time, my main priority is my Health. My goal is to maintain a healthy weight & to STAY Raw for LIFE! I'm REALLY Determined to manage/reverse my Type 2 Diabetes, lose weight & STAY healthy FOR LIFE...

Oh.. But I have GREAT Memories!! "Memories... Light the corners of my mind"...lol :-)



So any of you fellow raw foodies & ex-overweight/Diabetes individuals, who got Healthier by going raw.. PLEASE "hit me up" for inspiration and added motivation!!

Update: September 1, 2008

After going completely raw on August 14th, 2008, I went off my Diabetes Meds, exactly a week after starting On August 21st!! After a couple of scary days, where my blood sugars ZOOMED Dangerously high, after having been injected w/ Prednisone, due to a Peanut allergy reaction, while taste testing my freshly made Asian peanut sauce, my blood sugars have been decreasing little by little!!

They have been COMPLETELY normal for over a week now ( 95-100 in the morning & 115-125 after dinner!!) Weeeeeeeeeeeeeeeeeeeeeeeeeeee!!!
This is the FIRST time that I've been off my meds, w.o having to have lost 60 lbs 1st!! The last time was when I was in the process of losing all that weight & my blood sugars normalized after losing 60lbs!

I am fitting into my size 16 jeans again & I can feel the weight slowly starting to come off! I can't WAIT to see the dimples on my cheeks again & I DON'T MEAN The ones I SIT ON!! lol ... I notice I sweat PROFUSIVELY when I work out.. like I all those unhealthy toxins are just READY to come out of me..I go to the bathroom VERY regularly again ( 4-5 times a day) & I have so much energy.. its ridiculous!!

Sept 8, 2008:

I can't believe how quickly I have embraced this new way of eating! I have been preparing/ experimenting & trying new raw meal recipes almost every night! ( see pics & recipes!)...

I'm kinda tapering off my newfound excitement/enthusuiasm from the 1st couple of weeks. I find myself just preparing salads, smoothies and fresh fruit lately.. Giving my dehydrator a rest! Tho I STILL want a Vitamix.. My food processor is CRAZY messy!! . I've had to devise/rig a way to wrap paper towels around the edges, to soak up any "high speed" splatter, everytime I make my smoothies on it! Even my old blender woulda done better!! lol.
How can the community best support you in your journey? (moral support, transition advice, fitness tips, etc)

My breads and fruit bars, I dehydrate.
I don't have any Vita Mix recipes.. simply because I don't have one.... Yet!! lol

Aside from salads, fresh fruits, vegetable wraps/roll ups, trail mix, TONS of yummy smoothies & Vege juicing, the Following Easy "quick fix recipes" are basically what I've been eating in the last 2 weeks or so, since I went Raw! ... I'll be posting entree recipes as I transition my conventional recipes into Raw, while I experiment and eat along the way.. Remember.. I'm STILL a RAW "newbie"
I've taken some online basic ideas & tweaked them to my tastes.. Others I was already making raw..
I just never called them that! ( Dips, sauces, nori & vege rolls) ..Others, I will make up as I go along, as I explore/incorporate more fresh vegetables and raw foods into my diet..

My cilantro and adobo are my required staples on jazzing up most of my dishes..Always have been!
I do have a Slightly Spicy palate.. so if you like Spicy foods as well.. GREAT! If you prefer milder tasting foods... just omit sofrito, peppers, adobo or anything else that sounds too spicy. They'll STILL taste yummy! :-)

SALSA'S, SAUCES & DIPS

Organic Adobo

* Garlic Powder
* Cumin
*Turmeric
* Black Pepper
* Celtic Sea`Salt
* Italian Seasoning or just Oregano

Take equal parts of each & fill up a shaker container .. shake it up good & you're good to go! ( shake it good, everytime you use it as well)
I usually fill up a HUGE shaker or several empty ones from leftover condiment bottles... I use this when I want a little more "umph" in my meals, over just sea salt!

Sofrito Salsa


* 1 full bunch of cilantro( remove lower part of the stems/not all)
* I bunch of CULANTRO (optional), if u can find it ( its a thicker leaf used in Carribean/Creole/Boriqua Cooking) I add this as well
* 6-8 garlic cloves ( Depending on how much u love garlic!)
* 2 medium onions or 1 large one
* 1 huge green pepper( cored) or 2 medium ones
* 1/2 tsp celtic sea salt

Food processor or blender till choppy( don't liquify.. u want it chunky)
It should look like a salsa.
GREAT on salads, nori rolls, sauces, etc!
Store in fridge in a air tight container.. or double the recipe & keep 1/2 in freezer & 1/2 in the fridge.. like I do! I use this on ALOT in my dishes!

Pico De Gallo Salsa

* 3 large tomatoes or 4 smaller ones ( diced)
* 1/2 cup cilantro( chopped/minced)
* 1 large onion or 2 medium ones ( diced)
* 1-4 small jalapeno(minced)( depending how HOT u want it!! lol)
* juice of 2 limes
* celtic sea salt to taste

In a bowl, Combine all diced veges, squeeze lime juice all over it & sprinkle sea salt to taste..DO NOT process! Keep it chunky :-)
Marinate in the fridge for 1/2 hour-1 hour... Best FRESH.. DON'T freeze or keep in fridge longer than 2-3 days..Great for dipping, on salads or any kind of vege wrap/roll ups!

Amanda's Quick Guacamole


* 2 large Avocados or 3 small ones
* juice of 1 lime
* 1 tsp of sofrito ( see recipe below) or just cut up a couple of scallions & some diced cilantro!
* celtic sea salt or adobo to taste

Mash it all up & dip some bread(see recipe below) or veges into it!! This is my favorite snack of choice when I get the quick munchies! mmmmmm yummy!

Spicy Asian Cashew Sauce


* 1 cup of soaked Cashews( 8oz) ( u can substitute peanuts, but I'm allergic!)
* 2 tb sesame seed oil
* 1 tb Namo Shoyu
* 1tb yakon or raw honey
* 1tb of sofrito
* 2 garlic cloves

Food processor or blender till mixed.. Not liquified
* touch of sea salt if needed
& some spring water to get it to the desired consistency I like it thick but smooth.. some like it runnier for dipping) If u'd like to make a bigger batch, just double up on everything & store in the fridge in air tight container or freeze!

OYYYYYYY.. don;t even let me get STARTED on peanuts!! lol

SIDE DISHES & ENTREES

Mexican Spanish Rice


* 4 parsnips
* 1/2 cup pine nuts ( soaked for 4-6 hours)
* 1/2 cup sun dried tomatoes ( soaked for 4-6 hours)
* tsp of chili powder
* tsp of celtic sea salt or adobo
* 2 tbs olive oil
* 1/2 a red pepper
* 2 cloves garlic
* 1 small red onion
* sprinkle of pepper
* 2 tbsp of sofrito or 1/4 cup minced cilantro
* 1 lemon

Shred the parsnips in the food processor, take out & pour it in a bowl.
In the processor, Add drained pine nuts, sun dried tomatoes, sofrito for 5 seconds
Mix it in the bowl w/ the parsnip rice..
process onions, red peppers & garlic.. then add to the mix, along w/ olive oil..
salt & pepper ( or just adobo which has everything in there.. PLUS more)..
Add chili powder, then squeeze a whole lemon in there..
stir it up & leave in fridge for 1 hour..
FANTASTIC as a rice replacement on nori rolls or side dish!
Delicioso...Que Rico!!

Wheat Free Tabouli

Same ingredients as above.. except omit cilantro, sofrito & chili powder
Add:
* 1/2 cup of mint
* 1 small tomato ( diced)
* 1 cucumber ( seeded and diced)

Process parsnips for 30 FULL seconds add to bowl..
then process pine nuts, sundried tomatoes, red pepper, garlic, onion and mint together for 30 full seconds..
pour into bowl & mix all together w/ diced tomato & cucumber..
add oil, celtic sea salt , pepper ( or just adobo), & juice of 1 lemon
Ready to eat as is!

Raw Nori roll ups


* Sheets of raw nori ( double up 2 sheets & use as 1)
* a couple Romaine or Kale leaves
* avocado sliced thin
* 1/2 a cucumber spiral sliced or very thin
* 1 large shredded carrot
* 1/2 -3/4 cup mint( freshly washed & cut up)

Take 2 raw nori sheets ( raw nori is much thinner than regular roasted nori)
lay it down, spread an even layer of Spanish Rice or Wheat free Tabouli
( see recipes above ) or Nut Spread( see recipe below)
all over the top layer of the nori...even to the ends..
take 1/2 lettuce or kale leaf, lay a thin layer across the nori sheet.
lightly layer w/ avocado slices, shredded carrots, cucumber
( u can add a touch of sofrito for a spicier kick, if u like)& mint &
roll em up firm, but don't break em! lol
Slice them in 4 or eat them whole as hand rolls..
Dip them in Spicy Asian Cashew sauce ( see recipe above)
or whatever sauce you prefer... OR NOT!
I make these for a quick snack or meal..ALL the time.. so easy!! I luv em & they;re addicting..

Nori Nut Spread

* soaked sunflower & pistachio nuts( 1 cup unsoaked)
* 1/2 cup fresh mint
* 1 tsp of namo shoyu
* 1 tsp of sesame seed oil
* Celtic sea salt to taste
* 2 tb water
Blender/food processor for 15 seconds

Raw Pesto


* 2 handfuls of Fresh Basil
* 1/2 cup soaked raw pine nuts( pignolias)
* 1/2 total cup of soaked sunflower & pistachio nuts
* 3-4 cloves of garlic
* 1/2 cup olive oil
* 1 tsp of sofrito
* 1 tsp Celtic sea salt or Adobo if u prefer spicier
* black pepper to taste
* 1/4 cup nutritional yeast ( cheese substitute)

Blender or food processor for 15 seconds.. adding a touch of water or more olive oil to give moister consistency.. Double up, cause it Freezes GREAT!

Sun Dried Tomato Green & Kalamata Olive Bruschetta


* Sun dried tomatoes( from 3 tomatoes) or just buy em!
*2 large fresh tomatoes
*4 oz of marinated raw olives( kalamata & green) Buy em already marinated, online on rawguru.com ( http://www.rawguru.com/store/raw-food-diet/raw-olives/) or u can cure them yourself in olive oil & sea salt.. if u have the patience for the WEEKS to do so!) Most conventional olives are packed in a vinegar or lactic acid brine
* 2 large cloves of garlic
* 4 mushrooms cut up
* 1/4 cup fresh basil
( you can also add 1 small onion or pine nuts)
* sprinkle adobo

Chop and mix it all together... ( don't use processor)
stick in the fridge for 1/2 hour to marinate & eat cold... spread over ur bread, crackers or use em vege or raw nori rolls.
I like to stick em on my bread & heat em up in the dehydrator

BREADS


Onion Almond Flax Bread
(This recipe is hand mixed.. no processor needed)

* 2 large onions, sliced /cut thinly( like onion rings, but in half)
* 2 cups ground flax seeds ( u can also use 1c flax & 1c almond flour)
* 1 cup raw sunflower seeds ( soaked for 2 hours, then mashed up)
* 2 tb Nama Shoyu * ¼ cup olive oil ( u can also slice/mash a zucchini & add that as well)

Place everything into a large bowl and mix thoroughly...
use ur fingers like ur making a huge ball or a masher!! lol
Spread mix over a Paraflexx/Teflex sheet or greased parchment , onto 2 trays
Cut into 9 equal pieces Dehydrate at 90-100°F for 24 hours.
Flip and return to dehydrator for 10 more hours.

Zucchini Almond Bread

* 1/2cup olive oil
* 3cup almond flour*
* 1cup flax meal( ground flax seed)
* 3 zucchinis, cut in 1/2
* 3Tb lemon juice
* 1tsp celtic sea salt or Adobo( see recipe above)

Process olive oil, almond flour, lemon juice, zucchini & adobo/salt till it makes a batter..
in a seperate bowl.. mix in the flax meal.. then stick it in blender/processor again
( If u have I Vita Mix, just stick it ALL in a the same time!! lol)
Add a ONLY a touch of almond milk or water if needed!

This will make 2 tray fulls in your dehydrator...
lay your paraflexx/teflex or greased parchment paper on trays.
spread evenly w/ spatula & back of knife blade, scoring it into 9 sections..

Dehydrate for 2-3 hours.. then take another tray & turn the bread over onto it & peel the sheets off.. allowing the underside of the bread to be evenly dried as well...w/o the sheets... Dry for 10 more hours

Faux Sour Dough Carrot Bread

Same recipe as above.. except omit zucchini & add 2 large carrots!
Zucchini Spaghetti w/ Pesto & Sundried Tomato Olive Bruschetta


* 1/2 - 1 whole Zucchini ( 1 should be enough for 2 people)
* 1/8 cup olive oil ( just enuf to moisten)
* 2-4 mushrooms cut/diced up
* 1/4 cup of pesto ( see recipe above)
* 1/8 cup Sundried Tomato Olive Bruschetta (see recipe above)
* 1 tsp sofrito( optional) but if u have made some already.. why not?
* sprinkle of nutritional yeast or adobo or celtic sea salt

Spiral slice the zucchini..
mix in the olive oil & mushrooms, pesto & sofrito..
sprinkle w/ nutritional yeast and/or celtic sea salt/adobo..
makes a HUGE plate full or 2 normal portion ones! lol
My FAVORITE dish .. SO FAR!! lol
Spread on some sun dried tomato bruschetta ( see recipe above)

Raw Sicilan Caponata ( Eggplant Pine Nut Tomato Olive Salsa)


* 1/2 Eggplant, Diced( If you use the whole eggplant, then double recipe)
*1/8 cup Sundried Tomato Green Kalamata Bruschetta (see recipe above)
*3 tbsp minced Red Peppers
* 2 celery stalks diced
* 1/4 cup Pine Nuts( soak for 1/2 hour)
* Juice of 1 lemon
* 1 tbsp of sofrito ( see recipe above)
* 3 tbsp of Celtic Sea Salt

Dice the eggplant & then transfer it over to a collander.
Salt it with PLENTY of sea salt ( stirring it real good)
This will tenderize it, while drawing out the bitterness.
Leave it sitting for 4-6 hours.
Then rinse it out THOROUGHLY.. Then dry..Squeeze lemon juice & mix..
Mix in diced red peppers & celery, bruschetta, pine nuts and sofrito...
Voila!!! Enjoy... :-)

FRUIT BARS/DESSERTS


Banana Cacao Coconut Fruit Nut Bars

* 1 cup of soaked Raw Brazil, Pistachio & Almonds combined
* 2 ripe bananas ( over ripe is better)
* 3 tb raw cacao powder
* 1 cup of raisins
* 2 tb Yacon syrup or Raw Honey
* Meat of one young coconut ( use the water for ur smoothies!)
* shredded coconut (optional- to roll em in)
* slight pinch of celtic sea salt Blender/food processor till pasty

Lay down unbleached parchment paper ( spread coconut oil onto sheet to prevent sticking) or just use paraflexx sheets, on top of the tray!
Spread paste over the sheet, using a spatula to make sure its is evenyly layered.. Take the back of a knife to section them off into 9-12 pieces..
Food dehydrator to 110- 115 degrees.... 10 hours later see if they are firm enough to turn over( use another tray & lay it on the sheets & flip them over)
then peel the paper off of them, so u can lay them on the tray w/o any paper & dry the other sides!
Dry for 12 more hours ...
Then roll them in shredded coconut, if u like! mmmmmmmmmm

(I just thought of something... omit the bananas, add shredded coconut instead of coconut meat & replace raisins w/ dates & roll em up into balls & place into fridge till they firm up abit!!) I LOVE my sweets :-)

EASY Date Nut Coconut Balls

* 1lb of Organic dates ( pitted)
* meat from one young coconut
* 3/4 cup raw sunflower seeds( soaked for 1/2 hour, then dried)
* 2 cups of Almond meal/Flour
* 1/2 cup chopped raw almonds ( soaked for 1/2 hour, then dried)
( add any nuts you like.. cashews, brazil, macadamia, etc)
1 cup of shredded coconut

Pit the dates & mash em good in a bowl..
chop ur almonds in the food processor for only 5 seconds & place aside ( not too long or it'll turn into flour!)
Process the coconut meat for 10-15 seconds...
Then mix it all in the bowl w. the dates..
Add the almond meal.. little by little,, like ur making a firm loaf... add more almond meal if needed( you can even add like a 1/8 cup of raw cacao powder to the mix)
Then when its nice & firm.. just take a 1/2 a handful, roll them in your hands to make a ball,
then roll them on a plate full of the shredded coconut..coating each ball real good
Stick them in the fridge, to get firmer for an hour or longer.. Thats it!

YUMMY!!! mmmmmmmm

Coconut Vanilla Ice Cream/Sorbet

* Meat & Water of 3 coconuts
* 1 tsp of Vanilla extract
* Yacon syrup to taste ( or sweetner of choice)
* Big scoop of coconut butter( 1/2 cup)
( Why not embelish it by Adding soaked raw almonds, pecans, any nuts u like, raisins, raw cacao powder, etc)

Processor all ingredients.. sweeten to taste,stick in your ice cream maker for 30-35 minutes...voila!! Soooooooooooooooo Good.. mmmmmmmmm
Great in smoothies also!

Juice Feast Today!!

I'm attempting to juice feast all day today..Smoothies, Juices & water... Actually I want to see how long I can Juice feast for.. or maybe I should just wait till I use up all my veges in the fridge.. i just dont know how to explain the correct pronounciation! it is a lot like Ayesha with the "Aish" part with the stress on the first syllable and then "war" no stress and then "rya" as in Ryan!
and yea it has multiple meanings, this being a Sanskrit word for Goddess Durga, supposedly Hindu goddess of prosperity, power and wisdom. it also plainly means wealth and abundance. so an abstract noun too!
anyways, so there! am yet to realise whatever abundance and maybe next year you will be able to come here. we shall have the money to travel to the mountains. i really wish to head off to the north east in the next one year as a meditation retreat or just being and breathing in the high uplands. i hope we meet!
