Born and raised in France, vegetarian, former banker, now food entrepreneur launching the first ever vegan, jelled 90% fruit-based snack (the vegan, nutritious version of Jell-O). This is a future hit that will sell everywhere from supermarkets to deli to vending machines. I like trying new food. Lately, I discovered and was privileged to taste fresh cut mangosteen. It's a little bit like lychee, all in all very good.
Probably my most amazing food experience was in 2007 in Colombia. While visiting a cacao plantation, I was given the opportunity to taste the white pulp inside the cacao pod (see photo). It's the white stuff surrounding the cacao beans. I can hardly describe how great it was: it tastes as sweet and good as mango. The texture is uncommon, I can't describe it well. It seems fibery and dry when you touch it yet it's like a juicy puree melting in your mouth! I just can't believe no one tries to make something out of it. Once the pod is open, the beans -still covered with the white pulp- are let dry in the sun. So the pulp melts. Maybe it contributes to the aroma of the cacao. The Colombian guys could not answer that tricky question...

Vegan jello?! How fantastic! I'm interested in starting a food business as well. I took specialty food business classes at Parsons this summer to prepare my product. How did you get started? Did you have a consultant?
