1. Go to some tropical paradise and get trained as a yoga instructor.
2. Be around inspiring raw foodists (who make wonderfully delicious food and make me want to make wonderful food as well).
3. Move to New York for the summer and work in a delicious raw food restaurant (preferably Pure Food and Wine).
4. Find a job that is not BORING like the one I work at now!

this is the cafe gratitude recipe that i altered:
Cake:
9 cups nut milk pulp
2 cups well packed finely chopped dates
3/4 cup raw unscented coconut butter
1/2 cup raw cacao powder
1/4 cup vanilla
1/4 cup fresh coconut milk (blend coco-water with meat)
1/2 teaspoon salt
(I found this cake mix too bland...so i added and changed a few ingredients)
Filling:
5 cups pecans or walnuts
3 cups coconut flakes
1 cup agave nectar
2 tablespoons vanilla
1/4 teaspoon salt
To make the filling:
food processor 4 cups nuts, agave, vanilla, salt until nut-butter consistency. transfer to bowl and add remaining nuts and coconut flakes and mix.
make cake:
food processor dates until smooth (may need to add water or scrape down sides several times). next, in a standing mixer with the flat paddle or with a hand mixer at low speed, beat the date, coconut butter, cacao powder, vanilla, coconut milk, and salt until smooth. Add flour and mix at a highter speed until well incorporated. when ready, remove from mixer and seperate into however many layers you wanna make.
grease a removable bottom 9-inch cake pan and start forming your layers. set in fridge to chill.
take out, remove cake pan shell and pour over a chocolate sauce of your choice and chill again. i tried their chocolate sauce:
1 1/2 cup almond milk
3/4 cup cacao beans
3 tablespoons vanilla
1/4 teaspoon salt
Blend!

As for my job, I work in the back office of a very large brokerage firm. If you want to know my exact title, it's Credit Services Account Specialist. Basically, I'm a clerk who processes crap all day. As you can tell, it's quite thrilling. How in the world could I ever want to leave this wonderful cubicle of mine?
