Mason jars, those lockable glass containers from IKEA - pretty much any glass containers.

I buy seeds and nuts in bulk and I keep them in the bag I reuse time after time.
I put seeds in the fridge and almonds in the cupboard until soaked.

I think this would be the most eco-friendly. Not needing to buy extra bags/jars/containers.
I just bought fairtrade, organic cloth bags that can be used to nuts, seeds, produce. I even use them as nutmilk bags to strain out the liquids.
