Wow, catering for 100 raw foodies! Sounds fun.
I used to work in Toronto at "Live" Raw/vegan restaurant. During the Toronto Film Festival we catered for parties up to 200.
You just have to give a variety of tastes.
All wraps are always a hit, it allows people to sample a few types. Nori rolls, dehydrated wraps and of coarse collard, or other hardy lettuce wraps work wonderfully. Marinated veggie skewers are quick and super easy. Stuffed mushroom caps, cucumber cups..I like stuffed cherry or grape tomatoes as well. Veggie chips, crackers and dips. If you have a good recipe for a variation of crab cakes, or wild rice cakes they are great bite sized appy's. Dolmas, savory tarts..as you know there are so many to list.
I'm sure you will fill platters of delicious treats.
In Costa Rica, I will be preparing buffet style service. Lots of salad fixings, wraps, soups. Keeping things light during the afternoon, for dinner I will serve more of the entree type foods. It shall be excited to play with the fruits of the tropics..
take care Paul
Hi Paul,
enjoy your traveling adventure..
I do live in a beautiful area. When I'm not in the kitchen I work in reforestation on Vancouver island. I could only imagine what the forests that stood for so many hundreds of years once looked like....
As for my love of raw food, I am off to Costa Rica where I will be catering for 18-20 rebalancing students for 2 months. After that I will be venturing through Central America.
take care
It would be so cool if you were to start a holodynamic group where you are. Like I said it would be so neat to get a bunch of different communikties involved at the same time and have these built simultaneously! The world needs this kind of thing now!!
Hey Paul, thanks for the comment about my blog. I try to keep it simple. You can only remember only so much right before you're about to eat something less than excellent.
I was just in Sydney for almost a month visiting my family. I have friends near Melbourne.
I've been thinking of doing shoes actually... I know it's hard to get into that realm, but I'd like to do something along the lines of Vans in terms of old school, built in the usa, custom orders... style-wise I was thinking slip-on's kind of like Toms, but using recycled materials - without looking horrendous like Simple shoes. It seems that all recycled/organic material products look like shit out there and i'm not interested in poorly designed granola wear ;)
Hey, Thanks! I graduated from Art school back in '98. Actually, I sew a lot and design stuff as well...my friend Andy and I have been talking about doing some clothing. Maybe we can brainstorm? I'd be interested in hearing about your experience thus far...
Hey Paul thanks for the note. Yeah look us up when you come to the Riviera. We should be up and running the Raw Food spot by then. We are on 5th avenue and at the Shangri-La garden in Playa Del Carmen. Saludos,
Aelf
Yes! But have you read the book? It's impossible not to get inspired from that man!
I love wires and ropes and curtains and trees and anything that I can climb :)
You actually look a lot like a friend of mine named Eric. He lives in sweden in an old wooden wagon in the middle of the woods. That is a compliment btw.

i used to live behind the downtown quintessence, great food.
the comparison of queens to brooklyn; let just say i prefer manhattan to all.
