Today is off to a lovely start. I started with a wonderful smoothie that contained avocado (w/pit), organic strawberries, fuji apple, cucumber, red beet, goji berries, lime, lemon, flax seeds, corn, cilantro, basil, and mint. I also munched on some fresh pineapple. I had some brazil nuts, organic raw goat cheese (I know, dairy, but goat and unpasteurized... there are certain things I am allowing in this beginning phase - as a general rule, I do not consumer dairy). Later on, I had some organic strawberries and watermelon. For lunch I had a great salad with romaine, sorrel, a little lemon verbena, lots of sprouts, cucumber, sweet red pepper, avocado and onion, one clove of raw chopped garlic, and olive oil. Lots of food, keeping nice and full on healthy options.
I have to say that I am in love with nut cheeses, nut pates, nut pestos, and more. My favorite recipe has always been raw vegan pesto, made with pine nuts, basil, nutritional yeast, and garlic. I also love pine nut cheese, made with soaked pine nuts, lemon juice, and sea salt. Newer recipes I have tried are are brazil nut pate (great on sliced tomato!), and a sunflower seed and pine nut-based "cheese" for my mini pizzas. I also love avocados. So one thing I know I have to watch as the days roll on is my overall fat intake, also protein as it really is overdoing it for what the body needs.
I had the chance to weigh myself at Publix yesterday, and I was 147 at around 4:00pm fully dressed, so my estimation of 145 lbs was probably pretty accurate.
I am glad to be back in the flow, and my spirits are high. My body is also already going back to more regularity, which will make anyone feel healthier! As I mentioned yesterday, I do have issues with acne, which amplifies when I have my period, but I have noticed a few different blemishes that I attribute to the start of my detox. It seems quick for what feels like minor changes, but I have to remember that I made the most drastic lifestyle changes over a year and a half ago, and it had to happen in stages. What feels comfortable and tasty now would have been extra tough to get used to two years ago. I am accustomed to eating this way, and am simply increasing it. My real challenge/temptation will probably happen in a couple of weeks, as I know that is when my inner-peanut gallery tends to pipe in!
