i love reading recipe books. my favourite restaurant, Rebar, released a great one, not long after i moved out of my parents house and started cooking all the time. by now all the pages are dogeared or missing or shredded by my lovebird or splashed with some tasty concoction. i love the descriptions and suggestions for each recipe, and "braised winter greens", described as a great alternative to a salad in the winter, caught my eye. i fell in love from the first bite! kale had so much flavour! more concentrated then broccoli and heartier than spinach.
my exploration into the world of raw has caused an even deeper, almost obsessive, relationship between us. i like kale juice for breakfast and massaged kale salad for lunch. i like kale on my pizza and torn leaves in my salad. curly was my first experience but lately "Cavolo nero (also known as black cabbage, Tuscan kale, Lacinato and dinosaur Kale Lutes)" has been king. it's not the easiest to find though and i find myself trekking across the city to get my bunches.
i'm trying to score some space so i can plant some for next winter!
last night i got stressed out when the realizations clicked - the love of my life is seasonal?!? oh dear. is it going to be hard to find? am i going to have to find a new green for the summer? someone must have a greenhouse - the supply must keep coming!
"A whole culture around kale has developed in north-western Germany around the towns of Bremen and Oldenburg as well as in the land of Schleswig-Holstein. There, most social clubs of any kind will have a "Grünkohlfahrt" ("kale tour") sometime in January, visiting a country inn to consume large quantities of kale, sausage and schnapps. Most communities in the area have a yearly kale festival which includes naming a "kale king"."
