I've been eating simple this week. Cutting up beets, carrots, celery, tomatoes and red bell peppers then putting a simple ACV dressing on top. I add a little ground pepper and enjoy. I'm slowly (boy am I slow sometimes) figuring out that I want my diet to be mainly vegetables and fruit, less nuts and seeds. I'm still craving the fats though. I'm not sure how to get through that craving. I have been thinking a lot more about cooking some of my food, but do not want to go back to eating SAD vegetarian or even vegan. I do love baked root vegetables, though, so may add some of those to my diet in the winter. Oy...winter!
