Since people have been asking, I figured I'd put this up here for everyone to enjoy. It can be made into a Sprouted Quinoa Seaweed Salad, too. (I figured this out when I broke a couple of them first trying it, so no worries if the wrap breaks! :) Here goes...
The sprouted quinoa sushi is pretty simple. All you want to do is make sure that you find untoasted dried seaweed as a wrap (like Emerald Cove Organic Pacific Nori) and get your favorite veggies together! I usually slice cukes, carrots, peppers and anything else I have around... slice 'em long and thin!
Lay the sushi wrap flat and spread the quinoa to cover it about 2/3+. The quinoa should be moist if you just sprouted them, but you may want to get the sushi wrap just a bit wet so it'll roll easier.
Next, slide your veggies in place on the quinoa spread. You can also sprinkle some sesame seeds in if you have 'em. When you're ready, this is the tricky part, roll it up and dab some water to make it bend & stick. You'll have to experiment with this technique to really get it right.
Once you have a roll, carefully slice it into thin pieces and your sushi is made :o) If any happen to break just make them into a salad to go along, just add some Nama shoyu, which is a great thing to dip the sushi. That's all she wrote!! Have fun :)
I'd love to hear back about any variations you come up with! Enjoy!!!!
