
I would like to share with you my recipe for "magic chocolate" - I hope you will enjoy it as much as we do.
Jannikes Magic* Chocolate (large batch!)
-------------------------------
50g raw cocoa
50g raw cocoa butter
50 g raw coconut butter
1 cup each of:
- gojiberries
- almonds
- dates
- cashewnuts (they are probably not raw), can be substituted with other nuts
- walnuts
A little bourbon vanilla powder (1/2 teaspoon, maybe)
Cocoabutter and coconut butter should be melted on very low heat. Everything is mixed together in a foodprocessor, you should still be able to see small pieces of gojiberries.
If the mixture is to dry, add a little agavenectar.
I use a teaspoon and my hand to form the chocolate into oblong, bite-sized pieces. I
usually keep them in the freezer, you can eat them after thawing a few minutes.
Ifyou are not 100% raw you can add 1-2 tablespoons of "syltet appelsinskall" (candied orange peel.) I would be interested to learn how to make a raw version of candied orange peel, if anyone knows how to.
*) Why magic? Because they keep disappearing, every time I look in the freezer, there are fewer and fewer left.
