Well thats nice to know about the agave plant. I saw something on tequila and assumed they did the same thing for agave. I have soaked nuts and tried making nut butters with my Champion but it is too dry and really heats up the motor. In the past I made great nut butters with roasted nuts but it hasnt worked out well with soaked raw nuts. I used almonds. Maybe macademia would work better since it has more oil. Hmmm....going to try that when I get back. We have a store that has a great selection of nuts in Cuenca but not organic. All the almonds I have tried have a very weird taste that seems like a pesticide or something so I think I am done with them.I have done the blender version of nut butters and its just not the same. I am bringing back a Vitamix this time so we'll see if that makes a difference. I love the cacao at Kallari! We tried to buy a large amount of raw beans from them but they said they didnt have enough surplus. I actually tried their chocolate just to see how it was quality wise and it was for sure one of the best chocolates I have ever had. We need to try again at some point because their beans have a much richer and deeper flavor than all other beans I have had. In Cuenca we have 2 producers of cacao paste and they sell us organic raw beans for a reasonable price- $1.50 a pound. The market price is only around $.67 but for transportation I think thats fair. Did I mention that if you run the raw beans through the champion you get a paste and this blends well in puddings and pie fillings. Can be a little grainy but will change the color of the avocado or whatever your base is- not like just ground raw beans. But it does heat up the motor. I dehydrate the beans for a long time first to heat the butter within the bean and it works better. If you run frozen banana through at the very end of the process its yummy.Have you checked out the raw chocolate company in Quito? I want to visit them to see their process. They supply a lot of distributors in the US. Are you in Quito "permanently" or just for a year or so? Lori
No, I dont know how to make agave raw. They say most of it isnt- that's why I was curious. If I can make the yakon syrup I will be much happier with that. I love the agave plant and seeing them killed just to make syrup- I dont know. I would rather use an alternative. Something that grows faster. And it seems yakon has a lower glycemic level and is lower in calories. I actually havent tried lucuma in powder form yet. From just tasting the fruit it is hard to imagine it tasting like people say but... People say it gives a shortbread taste to cookies, etc. And it sweetens. I am happy your pie turned out well with the coconut cream. Did you make the cream yourselves? I would like to look into importing organic nuts. Do you know of any sources in Quito? Also dates...do you know of anyone who imports them in Quito? Supposedly one store in Cuenca will have them for Christmas but only during that time. One more question, have you found any machines to make nut/ seed butters? I am wondering if an electric molina would work if you ran them through several times???? Lori
Nice! Have you seen them process it to make sure it is really raw? I would love to know where you found it. I want to experiment with making Yakon syrup. I forgot the name in Ecuador but we got some and juiced it and it was good. I think if I dehydrate it maybe I can get the syrup. Have you tried that? I am going to make Lucuma powder by dehydrating the fruit- again forgot the name in Ecuador- and then grinding it. We dont see the fruit often but next time I am going to buy all I see. Have you tried the fruit? Have you found mesquite powder? I really want to locate that. Again its a matter of knowing the Ecuadorian name. Know it? Have you found a dehydrator in Quito? We looked everywhere and couldnt find one. I have been teaching classes on raw food prep and people really want one. I had to have one brought from the US. I also gave your name to a traveling raw foodist and told him to look you up. He teaches strawbale building so maybe a good contact for you. Lori
Hi Tom, Happy to hear back from you. We just met a woman here in Cuenca a few days ago who knows about raw foods through her sister who went to Hippocrates in Puerto Rico. She said there is a group of raw fooders in Quito and is going to try and get us some contact info. I will let you know if I get that info. But maybe its you she is talking about!

I dont really eat oils much but for making pies etc. it will be necessay to have coconut oil available for people. I have a Champion juicer that I make coconut cream with from mature coconuts. This hardens up in the fridge and can act much like the oil. I also use this machine to process raw cacao. I know there is a company in Quito with raw cacao but we havent been able to get in touch with them.
I am going to the US for a month and will try to bring back DVDs, etc. with spanish subtitles. It would be great to do an info. exchange with you. We want to create a library of sorts for people here with resources about raw foods. Its so hard to find information in Spanish! We did find one book here but thats it. That's hilareous. My husband looks at the sun to make himself sneeze. There's some weird phenomena that 10% of the population has that looking at the sun makes them sneeze.

Hi Loren. Dillon is 6 years old, very skinny and eats like a horse, I have noted in the past that when he has had a virus and been suffering from fever and lack of appetite that his autism is less severe.
