Yeah her recipes look great, I'm going to get a plan together of loads of recipes to take in to the new year and get my raw arse in gear :) I agree, Natalia's down to earth attitude is good - I even bought the book for my step-mum as I think she'll take to it better than some other books I've got so hopefully she'll start to get in to some raw stuff...

Hey Stephen that's great you're coming, look forward to catching up with you then. Gonna see if Dave can make it too as he's meant to be off travelling about then. Lucy and Cat should be there too and Paddy hopefully. I got Natalia's raw detox book that you recommended and it's great. I'm a level 3 apparently.
I'm having what I had last year and opting for a veg thai green curry and probably lots of raw chocolate! Your dinner sounds nice, I hope you enjoy it loads.

Well that is a Chocolate-Chai cheesecake, and it's top secret. But because you asked so nicely I am going to share it here:
Chocolate-Chai Cheesecake
By Simone Powers
Crust:
2 cups pecans*
¼ cup dates
2 tsp. cinnamon
2 Tbs. cacao powder
1 tsp. vanilla
1/8 tsp. salt
♥ Process ingredients in a food processor until it forms a sticky, doughy texture.
♥ Press into the bottom of a 6 or 9-inch spring form pan.
*Pecans may be soaked and dehydrated before using to make more digestible and lower the acid levels.
Filling:
1 cup almond milk
½ cup agave nectar
1 ¾ cup cashews
¼ tsp. nutmeg
1/8 tsp. clove powder
1 ½ tsp. cinnamon
½ tsp. cardamom
2 Tbs. soy lecithin
¾ cup coconut oil
2 tsp. vanilla extract
1/8 tsp. Himalayan salt crystals
♥ Blend all ingredients until smooth
♥ Set aside 1 cup of batter.
♥ Pour the remaining batter onto the crust
Take the remaining 1 cup of batter and blend in
¼ cup cacao powder
pinch of salt
♥ Pour over the cheesecake in a zig zag and swirl it in with a chopstick
♥ Let the cheesecake set up overnight in the refrigerator or freeze for quicker set up (The large the pan, the faster it will set up).
♥ This cheesecake will last for up to 3 months covered and frozen and 7 days in your refrigerator.

hi Stephen - thank you for being my RAW friend - our raw community in Iceland is growing - I have been giving raw classes for many years - in the beginning there were few attending - but last year I had about 300 people ..... and there will be more this year:)

On a mission to cure my diabetes. So far many ups and downs, but every now and then i get a little more motivation. Live is sunny Scotland with the rest of my raw friends.
How can the community best support you in your journey? (moral support, transition advice, fitness tips, etc)
Just by doing what everyone is already doing. learning and sharing. If there are any other raw diabetics out there, that would be great. looking for some ideas on how to best control blood sugar levels and get the most out of being diabetic and living raw in Scotland.
