My favorite avocado recipe:
2 ripe avocados, 1 mashed, 1 diced
1/2 finely chopped sweet red pepper
1 ripe tomato, seeded and chopped
1/4 cup chopped sweet onion
minced cilantro to taste (I like to generously sprinkle on top, too)
jalapeno finely chopped, to taste ( I like a generous amount)
Fold by hand all ingredients (except the diced avocado) until well mixed
Gently fold in the diced avocado
Serve in romaine lettuce boats with salsa verde, tomatillo salsa, or salsa of your choice.
Great with jicama (spanish rice), salsa, in massaged dark leafy greens.
YOu could add a nutmeat (tacomeat-like) I don't use nuts alot.
