I have eaten them with just the very first indication of root, but I like them best when the root is around the length of the seed itself. No rule for me, just preference.

Canned Water Chestnuts are not likely to be raw. I used to love them. I thought they were a nut when they are actually a root vegetable. I would like to try juicing them some day.
