melt 1c. of cacao butter + 1 Tbl. coconut oil in pan on the lowest setting. Keep stirring and testing that it doesn't get hot.
once soft, add 1 tsp. vanilla extract, 2 Tbl. agave and 1 tsp. date paste (which you can make yourself. Now add 1/2 c. raw cacao, stir with a spoon until evenly blended.
Pour into your molds, or into any container. Pop it into the freezer for about 20 mins. and Viola! Raw Chocolate! You can make this recipe and add a bit of mint extract and then after it's set chop it up in fine pieces and add it to another bar for a chocolate mint bar - or add almonds, dried fruit ext.

I've had a lot of requests for it this time of year. I used Karen Knowler's recipe when I made this one. I can't recall the exact measurements off the top of my head, but I can give you some instruction, as to what I've been doing lately.
In a food processor, grind pecans and almonds into a flour, add a few Tbsp. of ground flax, a dash of sea salt and some ginger. Then, add a touch of blackstrap molasses (although it still tastes okay without it) and a drizzle of agave. Process to form a ball of dough.
Flatten the dough on some parchment and cut into desired shapes. "Bake" in a dehydrator for about 24 hours. Glue the pieces together with your favorite raw icing and decorate with dried fruits, nuts, seeds, cacao nibs, etc.

Thanks for the email, I will add you on msn if you have it. W can chat on there much easier. Dental hygiene, and fruit. Fruits mainly a problem when youre eating too many nuts and seeds or dried fruits. The proteins in nuts/seeds are very acidic, which bacteria in the mouth love. particles of nuts/seeds get caught in or between teeth and the bacteria thrive on them. This in itself will be a problem. If you consume fruits near to this time too.
Dried fruits, including fresh dates which act like dried fruits imo, are sticky, and the bacteria love these.
Juices are a problem too. I dont reocmmend juices full stop for a variety of reasons, but if you do consume them, best have them through a straw.
Eating too many citrus fruits can be a problem too. Althoguh technically alkaline in the body, they contain acids, which will affect the teeth. I like certain citrus fruits and will consume them occassionally, but not daily or in large quantities.
My advice is not to clean your teeth within an hour of eating anything, but to clean your teeth after an hour, always, after eating.
You can use bicarb and water, or himalayan crystal salt dissolved in water, or 'natural/organic' toothpastes, or just plain water. Just as long as you do it.
Thats about as much dental advice as I think is needed really. :o)
