If you want to keep learning about 80/10/10, I recommend checking out the forum at 30bananasaday.com. Lots of fruit eaters there :). I see you're in touch with VOID/Adam as well. He knows his stuff! He's helped me a lot with getting this lifestyle under my belt.
There are a number of reasons why the body requires ratio's closer to 1:1. For example, omega 6 fatty acids can be pro-inflammatory in the body. Where as omega 3 are anti-inflammatory. This is defined by their end-products along the metabolic pathways. If omega 6:3 ratio is 30:1 this is actually a worse situation than most people have on a SAD diet, in terms of these ratio's. Potentially inflammatory by-products are being continually introduced to the body without adequate anti-inflammatory activity to counter-balance it. Omega 3 levels will become unbalanced if omega 6 levels become too high, particularly as high as your levels were. And oparticularly since you were only just getting the RDA for omega 3 despite all the fat and greens you were consuming. Again, it doesnt have to be 1:1 every day but I certainly wouldnt recommend going beyond 4:1. If someone came to me and had good omega 3/6 levels, and they were in a 4:1 ratio, I woldnt bat an eyelid, as this is perfectly fine, but the closer to 1:1 the better really imo.

Alot of the books ive read on nutrition are from a conventional point of view to be honest, and hence you just have to pick the relevant bits out. Alot of them are on biochemistry, which is abit pointless and dull if youre not going to go on to do something professionally with it.
Books on health, psychological health, I would suggest Human Givens, by Ivan Tyrrel and Joe Griffin, which is excellent. I quite liked Avoiding Degenerative Disease by Don Bennett too. This talks alot about natural exercises that humans would do. Hes very into raw foods too. I like all the natural hygiene texts, by Herbert Shelton and TC fry. I really like NLP too, if you havent looked into that already. I suggest any books by Richard Bandler/John Grinder.
Spirituality. God , I could go on forever. Anything by Gurdjieff, Ouspensky, Idries Shah, Charles T Tart (particularly Waking up: overcoming the obstacles to human potential), Jack Kornfield (particularly a path with heart), The obvious ones by Paulo cohelo, eg. warrior of the light, the alchemist, Johnathan Livingston Seagull by Richard Bach, I quite liked some of the Barefoot Doctor Series, I Ching, Way of the peaceful warrior books. Sorry for the delay regarding your diet. I get quite busy, so I tend to just reply when I have plenty of time to dedicate to a reply.
Fruit likely will not agree with you, as yuo have found, if you have been consuming a high fat diet, such as the one advocated by hippocrates.
To be honest, I am impressed by the nutritional content of your diet. It has a fantastic micronutrient content.
It is very low in calories (2100) for a man of your size (you need about 2600) and weight you need approx, particularly if you want to lose weight. Whilst it is of course a good idea to consume less calories if you wish to lose weight, if you consume too few calories for your needs, what happens is that your metabolism will slow down significantly, causing your body to conserve its weight as much as possible.
It is also very high in protein (99.9g). This does give you an excellent amino acid profile, but is unnecessarily high for your needs.
Your EFA's are very unbalanced too. Your omega 3 levels are 1600mg approx. which is bang on the target for male RDA s (although I do personally recommend 2-3000mg for safety). However your omega 6 levels are 31679mg. This is a massively unbalanced picture. 4:1 in favour of omega 6 is the maximum ratio I recommend, Ideally more like 1:1 is appropriate. This will seriously throw off your omega 3 use by your body.
Your phosphorus levels are also very high (probably due to the excess protein intake) at over 2100mg. Phosphorus needs to be in a delicate balance with calcium and magnesium. The ratio should be roughly 1:1:1 however if one should be higher than the others, it is calcium (yours is only 1200mg), not phosphorus or magnesium (which is 1500mg).
Your selenium intake is also very low at 18mcg (ideally it should be 45-55mcg, through 35mcg can be acceptable)
Otherwise, your nutrient levels are genuinely excellent.
As far as your macronutrient ratios go, 48% of your calories are coming from fat, with 16% coming from protein, and only 36% coming from carbs.
Just out of personal curiosity, what are your bowel movements like on this diet?
The diet I will suggest is much simpler and will be much lower in fat and much higher in carbs.
Here is a sample of what I can suggest. I have no idea what food you like and what you do not. If it does not appeal to you, or you would prefer other foods, or you cannot get certain foods available or affordably, please let me know what foods would be better and Ill see what I can come up with. Here goes for now:
1 watermelon (at 7inch by 7inch)
10 medium bananas (fully ripened ie. brown and spotty)
1 large papaya
1kg romaine lettuce
15 large celery stalks
5 oranges
1/2 an avocado
1/2 cucumber
200g tomatoes
1 sweet red pepper
optional 1 tbsp ground hemp seeds
This will provide you with 2833cals
65g protein with 753mg methionine (both of these are still way in excess of your needs). Efa's omega 3 2000mg, omega 6 5558mg. All your vitamins and minerals looks excessively good.
Colon hydrotherapy isnt something I particularly recommend. It wipes out the good bacteria and can potentially make your bowels dependant on them in a very short space of time.
The foods I ferment are Cabbage, Coconut, and Sunflower or a combination of Sunflower and Sesame Seeds. Fermented foods are probiotic. They help to replenish intestinal flora which aids in digestion. For the recipes look at the blogs on My Page.
