No need to preserve it, just put it in the fridge and it solidifies, you can re whip it by blending it. Just add whatever flavouring you like, but the less water the better as it does...
Denise, it depends what the recipe is. Coconut better is definitely different that just the meat. The butter is the oil extracted from the coconut meat. So in many recipes substituting meat for oil/butter will not get you the desired result :) Fin...

I bought a cheap Oster 16 speed blender (like $25) about a year ago and it does magic. Sort of small, but blends everything I need and leaves my green smoothies smoooooth. Even blends whole nuts =] Oh yeah!
