I really like brazil nuts for this cheese as well. I just saw them on sale for about 3.00 a lb at a local chain store and mac nuts can be like 8.00 a lb so it's nice to go with whatever is on sale too..
my hypothesis is that the experiment that produced those results is counterintuitive and perhaps flawed. then i proposed an alternative mechanism.
