Give it to me Raw


These are basic cacao macaroons with fresh (or organic frozen ones) cherries inside, for a soft and completely melt-in-your-mouth and make you grin ecstatically surprise!

3 cups unsweetened, shredded coconut

1/2 cup agave ( maple syrup, honey or yacon would work also- pick your sweetener!)

1 teaspoon celtic sea salt

1-2 heaping tablespoons cacao powder

1 teaspoon vanilla extract

optional: a spoonful of coconut butter

Mix all ingredients together by hand in a bowl and chill for a bit to make them stick together better when you drop them by spoonfuls onto the dehydrator trays. They go faster without the teflex sheet underneath, so that's why chilling is helpful.

It's also really yummy as wet "dough" (and honestly i'm not crazy about dehydrated food, so often just eat this as is. . . use as topping for banana ice cream, use as grawnola in the morning. . .
If you dehydrate them, 115 for however long it takes until they're how you like them, usually just a few hours for crispy on the outside and soft on the inside PERFECT macaroons! (They'll harden a bit when you let them cool so keep that in mind)

Enjoy. . . and try not to horde them all, 'tis the season of sharing (but i was alone in the house the past two days and had the whole batch to myself!!!!!!!Yippeeeee)

I love cherries. When I was pregnant with my son, they were my biggest craving. I actually bought $40 worth of them and ate them in one sitting (well, it's better for you than pickles and ice cream).

I make these macaroons all the time. A cherry inside would be a lovely surprise. Sometimes the simplest changes to a recipe really puts it over the top. Thanks :-)

Just a question - is "coconut" raw when it is in bags in the supermarket? I know you can buy sweetened/unsweetened/toasted, but if it is just "unsweetened" in the bag is it raw? Or do I have to buy it at the health food store in bulk?

i buy unsweetened, organic shredded coconut from the bulk section of the health food store. . . or from alissa cohen's site (where you can be absolutely sure it's raw). . and probably other internet sites have it as well. . .
