A few years ago we were members of a small CSA (farm share) and they grew boc (and pak?) choy. It came home with me one day, with the other lovely veggies, and I tasted it. No one else in my home wanted to taste it--but, I didn't mind because it tasted so light, juicy, and fresh and I wanted it all to myself!
Since then, I've purchased it a few times. As others have said, it's just the cutest little veggie (if you find the baby kind). I've used it as wraps for different dips/spreads and it's so yummy. I've used it as the base of a salad, too. I love, love, love how much water it contains!
What about you? When did you first encounter bok choy? When did you realize you had a special love for it? How do you use it?

Pssst! Shhhhh, don't tell anyone, but- I like to eat mine in the car... in empty parking lots... in the dark... alone.
My first taste of it was just 2 days ago. I was inspired because I had some lovely hummus and didn't have anything to eat it with. I saw the bok choy and decided to give it a go.

Jas~~back it off a bit...i upped my dose from 2 T to 3T for 4 days and it was tooooo much...had a severe headache every one of those days....so today im not having any,and tomorrow i will start again with my regular dose again...i increased mine p...

Makes sense to me cos I have them. I used to just have one but after your post I had a further look and I have about 6 more. Some of mine are slightly raised. Recently I have decrease my fat intake by around 75%
