Made up a healthy and tasty dish the other day I call GuacoSalad.
Avocado in a bowl (1 medium)
Diced tomato 1/3
Diced onion 1/4
Diced garlic (1 clove)
Diced cucumber (1/2 medium)
Squeeze 1/2 lemon and a little pulp
Add some black pepper and paprika to taste
Mix in a handful of pine nuts
Hand stir and eat. Serves 1 as a meal, serves 2 if you are eating as a side dish!
Blend tomatoes and sweet peppers with a bit of water, squeeze out the excess juice, mix with lemon juice, avocado, soy sauce or miso and wrap in nori - takes about 5 minutes, maybe 10 including clean up ^_^
I also use a tomato/pepper base with raw fish when I can afford it, it's perfectly moist and acts like rice to bind it all together.
I know its not a main dish as such, but I really (really) like grated carrots, some finely chopped nuts (pecans, walnuts) and dates with some nice sweet spices and just a little coconut oil. Stir and mash it all up and eat it straight out the bowl. Or blend it up a bit and dip slices of apple and pear in it. The goo it creates reminds me of eating leftover cookie dough as a kid in moms kitchen.
i havent got time to play with my food usually so a great big plate of miscellaneous veggies with a dressing of lemon juice and olive oil laced with my fav herbs or spices. sprinkle with some sunflower seeds or pumpkin seeds.
i have recently discovered sweet potatoe raw and that ends up in most of my salads either grated or just sliced.
can you eat sweet potato raw? Is sweetp different fro ma normal potato? Because i`ve heard that potato is dangerous to eat uncooked? :/
