Hey ever since going raw, I haven't been eating a big variety of veggies. I feel like i should be consuming more. I do get a variety of greens. What are some good veggies that are easy to digest raw? So many vegetables seem to be hard on digestion. How can I get that variety I used to have.

Have you tried juicing the veggies that you would otherwise consider hard on digestion? How about soaking and dehydrating?
I personally find hard squashes difficult to digest in their natural state but I LOVE using their juices in soups (acorn squash, pumpkin, butternut squash).

Maybe you should make tea with the burdock root:) It's so good for the liver and digestion. I actually love the taste of burdock tincture (I'm odd like that!)
Burdock is usually dried and made in a tincture or as a tea. Dont throw it away! Nature is providing you with something that may be of some use to you later. Just dry and save it for when you need it. Google burdock and you will find tons of info on it :)
stuff like mint and parsley are only labeled herbs by humans...if you were in the wild i would imagine mint would taste pretty good if you were searching for food. Their is no reason it should not be considered a green vegetable. Each green has a distinctive taste.
Wanna know an herb that really tastes nasty on its own? Wild Chives! My God I had a pungent horrible taste in my mouth for hours. That is the day that I never consumed a chive again lol
