I've just been hired by a local cafe to add some raw dishes to their menu. I'm looking for some suggestions for types of dishes to add to the menu. They need to be somewhat SAD friendly and not too complicated(I'm thinking no dehydrator) I'm meeting with the owner tomorrow and she wants some samples. Anybody have any suggestions or ideas??
I loved those raw peppermint patties you made last year at the retreat...okay, thats a dessert but it was a huge hit!!!
Also, I second the guac, nori rolls, maybe mock tuna?

The best gourmet is not dehydrated! I converted my dad and mom with the following staples. They lost 60 and 40 pounds respectively, and didn't even do 100%.
Caesar Salad: romaine, dulse (anchovy replacement), dressing of pine nuts, a bit of avocado, lemon juice, garlic, dates, apple cider vinegar, black pepper, etc.
Chocolate/carob mousse: carob/cacao with dates and avocados blended.
Gazpacho: tomatoes, onions, cilantro, cucumbers, celery, etc. blended with the same chopped as garnish/to add heartiness.
Sushi: cauliflower/cilantro/lime/ginger rice with cucumbers, avocado, rolled in nori with nama shoyu and/or almond butter or tahini dipping sauces.
Mock curry tuna salad (very high fat but hearty for a guy who doubts raw food's ability to fill him): soaked sunflower seeds pulsed in a food processor with chopped celery and dulse flakes. Mayo: soaked cashews blended with garlic, lemon juice and curry powder. If you want to throw all food combining out the window, add some chopped grapes. Mix all together. You can even hollow out a tomato and serve it in that.
Raw mock spaghetti and meatballs: Spiralized zucchini with marinara (soaked sundried tomatoes, tomatoes, red peppers, and whatever else you want (onions, salt, pepper, olive oil all optional), and walnut meatballs (walnuts, parsley, red onion, lemon juice pulsed in a food processor)
Banana ice cream: Blend 5 frozen bananas for every 1 fresh. Add mint or cacao nibs to make mint banana chip. (The possibilities for low fat fruit ice creams are endless, just make sure you get the right consistency and always add at least 1 or 2 fresh bananas for creaminess).
Almond butter cabbage salad: Chopped red and green cabbage and cilantro (and carrots if desired), dressing: raw almond butter, lemon juice, dates/agave, nama shoyu if desired, garlic, ginger, etc. Toss, it's good.

Thanks for all the great suggestions so far. I think I am going to make kale salad, mock tuna stuffed tomato, chocolate mousse and possibly burrito and coconut cream pie for her to taste....I have to see what I have on hand
