These items are often featured in raw food recipes, restaurants and products, but they are not commonly found raw. Many raw food websites, books, etc. have a "high raw" philosophy that allows for some cooked food. This list is intended to help you be aware of cooked items, so that whenever you want to, you can eat Purely Raw foods.
Several of these items are often labelled as "raw" and/or sold by "raw" websites, yet they have been heated. You can purchase a few of these items raw, when they've been specifically produced for the raw food community. The seller will usually mention the measures taken to keep the product raw in these special cases, when you are not sure, always ask.
We contact the producer no matter what the label says. More often than not, we find a step that involves too much heat. Please do the same. The more health aware customers contacting producers and suppliers about their methods, the better for everyone!
I don't agree with all of the above, but I think most of it is true. I don't mind miso since it is fermented for ages and it is used more as a condiment. Unfortunately, unpastuerized almonds are very expensive, so I usually live with whatever batch of raw almonds I get :-(.
Raw cheese typically uses thermalized milk. I'd like to setup a raw foods wiki one day to post this kind of information, but Organic Valley and most other brands use thermalized milk. I've contacted serveral companies, and can confirm that Sweet Grass Dairy and Fiscalini raw cheeses are truly raw.

chris--can you get any data on hazelnuts? i had heard that hazelnuts are somehow "stabilized" after shelling with heat or chemicals or something.... but i dont have a source for this info. is this just a rumor or...? thanks.kabee
While it would be news, it would not surprise me. people who build machines that process foods have been selling the needs for their wares for a long time.

Neither Zoe or I eat nuts anymore (just sunflower seeds) so I really don't mind, but I'd like to update the list if it needs it. If anyone has any info on this let me know please.
thanks--i always wonder if theyre safe or not. i feel like nothings "safe" anymore... unless you pick it yourself, which isnt possible for many of us re: nuts.
Thanks for the list. I rethought my consumption of olive oil a few weeks ago when I finally reconsidered the fact that olive oil is not naturally isolated in nature. The foods I choose to eat tend towards those that remain in the form in which they are found in nature. As for Bragg's and Agave nectar, I never got into them; I want to to eat fewer processed foods altogether.

I haven't tried yacon; I think it's still too sweet, technically. I believe stevia is truly the only natural sweetener that is not a form of sugar. When I add vanilla flavor and a little coconut oil to the stevia, it's kind of like maple...
