Give it to me Raw

i recently discovered raw sweet potatoe....i'm hooked having it uncooked!

tonight i served it shredded and mixed in some curry powder, mustard seeds and lemon and olive oil. it ws delicious!

what are your favourites sweet potatoe dishes?

Sorry Sharon, I'm no help...I've been a bit afraid to try sweet potatoes raw. I guess I assume that they are similar to carrots, and since I think carrots are difficult to digest, I've ruled out the possibility. So tell me, are they similar in consistency? Are they easy to digest? I'm dying to give them a go!

they are similar consistency to carrots yes, and the flavour was very similar although a little more starchy. ive had no problems digesting them at all.

I like raw sweet potatoes juiced with granny smith apple and a touch of added cinnamon. It tastes like pumpkin pie but better. For a real treat, I add raw milk cream and some vanilla extract - it's heaven in a glass.

No, just juiced. I used to like raw sweet potato chopped/grated but lately I've found the fiber upset my stomach so I'd rather have it juiced or cooked.

We use spiralised sweet potatoes as pasta ;) Squeeze in some lemon juice and a pinch of salt..leave to sit for a while as this takes out some of the starch and makes it a bit softer. You can add olive oil and dehydrate after this but I usually can't wait that long ;) Top with your favourite pesto or marinara sauce on a bed or green..hey presto ;) Yum!

Creamy Yam Mash

2 Yams
2 Tablesppons coconut butter
1 Teaspoon Celtic salt

Variation:
Add cinnamon to taste

Blend Yams in food processor with the 'S' blade until relatively smooth. Place in a glass bowl and cover with coconut mylk or water. Place bowl in dehydrator for about 3 hours at 145 degrees and then at 115 degrees for 3 hours. Remove from dehydrator when liquid has mostly evaporated. Blend in a high power blender, adding remaining ingredients.(only a high power blender will make it very creamy)

You could make a raw soup, Juice a few carrots and put the carrot juice in a blender with chopped up sweet potatoes and shredded coconut and a dash of nutmeg, could be a good dessert also.

Iv'e been having some white Hawaiian sweet potato and a pink variety from a local farmer... I steam it... it is buttery and sweet just plain with nothing added; and I also use himalayan salt and pepper at times...


Besides simple starches, sweet potatoes are rich in complex carbohydrates, dietary fiber, beta carotene (a vitamin A equivalent nutrient), vitamin C, and vitamin B6.

In 1992, the Center for Science in the Public Interest compared the nutritional value of sweet potatoes to other vegetables. Considering fibre content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, the sweet potato ranked highest in nutritional value. According to these criteria, sweet potatoes earned 184 points, 100 points over the next on the list, the common potato.(NCSPC)

You could use them in a sweet potato pie. I just recently made a raw pumpkin pie from the Cafe Gratitude recipe. It was wonderful. I bet raw sweet potatoes would be delish.

Just take about 3 cups of sweet potatoes
The meat and water from one young coconut
Pumpkin pie spices: cinnamon, ginger, nutmeg
Add agave to taste....around 1/4 cup
Lecithin will thicken it but I assume you can use chia powder or flax also....might be a different texture.

Make your standard crust using pecans, dates, etc.

It's delish.
