Yes Charles, I did. As a matter of fact, I'm going to make some more tomorrow and put them in the freezer. That way when everyone else is having their cooked pies and cakes, I'll be enjoying my raw one.
And, it is really tasty. I just love it.

Just a note on the Cafe Gratitude Pumpkin Pie that I made today. This came out differently from the ones last week...for various reasons. I purchased three young coconuts and all of them were bad...they had purple water and meat. So, I improvised and used some coconut flakes and water for the coconut cream. I also didn't have any lecithin in the OR house....so I used ground chia seeds. I used a small pie pumpkin for this one and not the butternut squash. I also used pumpkin pie spice instead of using all the individual spices....about 4 tsp. Just enough.

I'm pleased that I will have them in the freezer next week. While making the crust, I made a double batch. I'm freezing that crust and will use it for a chocolate pudding pie later next week.

Haha. And, what would my family eat for Thanksgiving? I'm sure they'd have something to say about it *haha*

We will definitely have to get together when I come up here one time. It will just have to wait for when the weather gets nicer. I'd hate to drive over the passes when the weather is bad.
