I used to love caesar dressing until I had to make it in a restaurant. Raw egg and small smelly fish plus oil and garlic blended in a blender- yum. Plus parmesan. I loved the texture of it too until I knew what was in it.
I just made a dressing like it today. I had to stop thinking about the original because it was freaking me out- hopefully this isn't your problem- because it's a great way to use chia seeds.
All I did was pour some chia seeds into a blender with about 8 oz of water plus a couple garlic cloves, fresh juiced lemon or lime, fresh ground black pepper, a little sea salt and a few brazil nuts and cashews. It was really good- and don't worry if it's not perfectly creamy because the texture is nice to have. I put half a tomato, some oregano, basil and celery seed. I drizzled it on chopped romaine and half chopped collard greens with a chopped tomato and chopped cilantro. Very simple but good! The dark flecks are reminescent of the ground anchovies of caesar but don't think about that!
I didn't use a lot of dressing on the salad- just drizzle it on throughout because you don't want thick globs..
