Hey guys I received some free purple corn flour but I have no idea what to do with it. I trid to mak a porridge out of it but that turned out really grainy and awful tasting. Any suggestions?
Hi Vaughn, I'm high raw, not 100% so I'd make muffins and throw in some berries. All those purples would look wonderful.
I do use purple corn extract in green smoothies. I stir it in after I've blended everything so there's a swirly pattern.
I love purple corn! I usually get the whole kernels and soak them overnight. I use 2cups of kernels per 1 gallon of water. The purple corn is so rich in antioxidants they bleed into the water causing it to turn a dark beautiful purple color....thats right....you get water packed full of antioxdants!!! I drink this all day long, use it for smoothies or ad some fresh sqzed lemons and oranges for some flavor..etc.. Maybe try to rig up some sort of tea bag with a chz cloth and use the ground purplecorn like tea and steep it, add some agave nectar and lemon juice for flava flav!!!!
Blend up a cup of sunflower seeds & a cup of flax seeds, each until powdery. Add a cup of that purple corn flour, some salt, some chili powder, and some water -- enough water so it'll all blend, but not enough that it'll be watery. (You really need a high-speed blender, as this'll kill a "regular" blender.) Transfer this batter to a bowl and fold in some sesame seeds. Take large handfuls of this "batter" and spread it out on parchment paper as thin as you can. Add another sprinkling of sesame, spices, and salt. Dehydrate for 6-8 hours @ a living foods setting, then peel from the wax paper and dehydrate another 12-24 hours. That should make 4 trays or so in a standard Excalibur.
