I just made yet another batch of sauerkraut that didn't turn out. I think it tastes like alcohol and it may have hurt my stomach, but I do have a hyper sensitive stomach so I'm not sure. But I don't think it tastes right. My boyfriend said it was acrid tasting.
So I heard on this video that it needs to sit at 72 to 85 degrees to ferment properly. We can't afford to keep our house that warm! Our house was definitely cooler than that when the cabbage sat for only four days.
