Hey everyone
I've just got a batch of kelp noodles and am really looking forward to trying them.
I'm interested in any recipes you guys may have that would incorporate them, maybe a sauce to go with them? I'm not eating tomatoes at the moment so anything with toms is out!
ok here's the trick- you need to marinate them in something acidic (i use lime juice) for a while before you eat them so they soften like real noodles. I usually give them a few hours or even overnight. I make a sauce out of nama shoyu, orange juice, garlic, ginger, and a little sesame oil. I usually like to chop up some veggies like peas, carrots, celery, bell pepper, whatever you like and let them marinate in the sauce also. Then when everything is done soaking you just mix it together and it's like teriyaki noodles- very yummy. You could also add almond butter and make it like a peanut sauce. I also use kelp noodles as filling for nori rolls instead of rice, and I love to put them in miso soup with lots of green onion. For some reason I only like them in asian style recipes, I have always thought they tasted gross with marinara. Have fun!

Pesto base is good with either walnuts or pine nuts. Either way is great.
yes .. and do something VERY fun ... put them in the dehydrator AFTER you add the sauce of choice ... warm them up a bit and WOWOWOWOWO ... yes. About 2 - 3 hours .. does the job. Make our jaws drop and send a pic when you can. I will post a pic of what Chef Ito does with them at Au Lac. :))

Thats interesting but would the body react differently to fruit sugars as opposed to all the other sugars? I didn't have these spots when I spent most of my time partying and living on junkfood.....

yeah tastes chamically to me too. weird cuz its totally natural but yeah it does. ifound when i grew the fresh plant that the bigger lower leaves when i ate them fresh tasted a bit more palatable than the smaller newer leaves. they tasted "greener...
