Tom makes a large batch of this smoothie nearly every morning. The fruit in it changes according to the seasons. In the summer we use peaches and nectarines instead of pears and apples. This smoothie has been paramount in the lives of many people we have helped. It can literally change your health in a matter of days and hours. The fruit is a rich source of soluble fiber and a host of vitamins and antioxidants. The greens offer powerful phytochemicals. Cabbage is a potent food that affects many pathways in the body. Ginger is a powerful anti-inflammatory. The lemon offers vitamin C and bioflavonoids. And yes, it tastes great, as many of the people in our cooking classes will tell you. This smoothie makes enough to fill a Vita-Mix so divide the recipe in half if you are using a regular blender.
Serves 2 to 4
2 apples, cored and cut into chunks
2 ripe pears, cored and cut into chunks
1 to 2 cups water
2 lemons, juiced
1 to 2-inch piece fresh ginger, peeled and sliced
5 kale leaves, rinsed and torn
5 romaine lettuce leaves, spinach leaves, or collard greens, rinsed
1 cup coarsely chopped green cabbage, optional
Place the apple chunks, pear chunks, water, and lemon juice into a blender fitted with a sharp blade or a Vita-Mix and blend until smooth and creamy.
Add the ginger, black kale, romaine lettuce, and green cabbage, and blend again until very smooth. Add more water for a thinner smoothie. If lettuce leaves are too much for your blender, consider chopping them up in a food processor first!
You can taste it now and if it is too “lettucy” for you then add another pear and blend again. Add more water for a thinner consistency.

This is one I've been doing for myself and many others for a minute, its my flavor of the month so to speak.
fill the blender with kale and spinach and add a little water and blend up (kale can be switched for chard or green sprouts or some kind of green or...)
add 2 apples, 3 kiwis, and 2 or 3 bananas and blend it up. Note: quarter the apples and only remove the stem, eat the skin, seeds and core, just cut the glue off if they put a sticker on it. Just cut the ends and the glue off the kiwis and cut them in half - also you can add berries if you have them but they aren't necessary.
Blend for about 10-20 seconds until makes a nicely blended treat. Breakfast and lunch .... voila.
Its awesome. Its totally digestible and okay and it adds a delicious tart zing that opposes the kiwi sweet wonderfully. I wouldn't do it any other way, try it.
Mango Green Smoothie
1 Fresh Mango (peeled)
1.5 Medium Bananas (peeled)
2 handfuls Baby Spinach
1 cup Water or Coconut Water
4-5 Fresh Mint Leaves
Toss everything in the blender and blend until smooth. If you like a thick smoothie, use frozen fruit and/or less water. If you like a thinner smoothie, use more water as you blend.
Ruby Red Smoothie Recipe
• 2 ruby red grapefruits
Cut a slice of peel from each end of the grapefruit. Standing the fruit upright, continue to slice the peel away from the flesh without removing too much flesh. Be sure to remove some of the pith which tends to have a bitter taste. Although the white pith inside the fruit may be bitter, it contains health qualities which are anti-viral and anti-inflammatory and compliment the vitamin C found in the fruit and make it even more potent. Place a bowl under the grapefruit as you cut to catch the sweet tasting juice.
• 1 bunch mint
• 2 medjool dates
• 1 handful kale
• Water (optional)
Place in the blender in the order listed. Blend and enjoy!
Antioxidant Green Smoothie Recipe
One handful dinosaur kale
½ cup blueberries
1 cup red grapes (seeded are best)
2 or 3 medjool dates
1 cup water (optional)
Blend and enjoy!
Agave Strawberry Lemonade

Juice of 3-4 fresh lemons
4-6 cups spring water
1 handful of strawberries
Agave syrup to desired sweetness
Blend all ingredients in the blender, serve and enjoy. To decorate slice the bottom of a strawberry and slip the berry onto the rim of a decorative wine glass!
