Give it to me Raw

i find that it's sometimes hard to get in many greens, because i usually eat so much fruit, but i know greens are amazing for you. so i wanted to see how everyone else's intake is? how much do you eat? do you eat the same kinds every day? are there any you think everyone should try to eat?

This is a great question. I am currently working with a vegan nutritional educator/counselor on moving my green intake to the 50% mark, at the very least (I think I am at 25% right now). I agree with you completely, that fruit is most of what I consume (for convenience and taste purposes)

I am finding that simple sweet citrus dressings make greens much more palatable, and I am hoping that someday the abundance of greens that I will eat will taste great without the "add-ons".

I am more prone to spinach, kale, and romaine. Collards are specialty items for me when I feel like gorging on "soft tacos", as collards make the best vehicle for this. Lambquarters is another one I thought was fantastic when I ate it in Asheville, NC (growing wild in the backyard of the hostel I stayed at).

thanks for the reply! i agree about dressings making it much easier, along with adding greens to smoothies. i'll need to start doing that daily. i also want to get my intake to 50%. what are some of your favorite dressing recipes?

most of my diet is greens in forms of smoothies or salads. really into strawberry and romain lettuce smoothies now. leave strawberry tops on.

I used to do the green smoothies in the morning but now it became green soup after 2 years being raw.
For lunch I usually do a romaine salad and for dinner anything I want with more greens...

My shopping list is mostly 90% greens: different types of kale, spinach, collards, romaine lettuce, red leaf lettuce, 2 or 3 types of chard, arugula, dandelions, parsley, cilantro, and mixed greens.

For the smoothie or green soup, I choose a variety of these greens above and add 1/5 part fruit (if a smoothie) or tomato, cucumber, and avocado (if soup). If you like lemon and olive oil, add it to the soup... great breakfast!

I also drink water with a green powder throughout the day... supergreens or alkavision work the best for me...

So daily I would say I eat about between 85% and 95% greens.

Soup is salty: I add real salt to make it salty and I use a tomato, cucumber, lemon, and olive oil.

when i'm feeling extra hungry i have big salads for dinner with whatever greens i can get. and sometimes i grow bok choi in my garden and just munch it right from the ground. i put the greens that grow wild in my area in smoothies everyday...chickweed, sometimes seaweed, golden rod, plantain, comfrey leaf, etc

I eat about 1 and a half pounds daily, roughly. I switch them out daily. Red leaf, green leaf, collards, romaine, arugula, broccoli florets, celery, red chard, swiss chard.

I make a salad or wraps for lunch, the salad consisting of a green like red leaf, green leaf, arugula, romaine, or chard with tomatoes, cucumber, sprouts, radishes, broccoli, etc...with usually half an avocado mashed up, and mixed into the salad. Sometimes I will add nutritional yeast to the salad as well, and top it with sesame seeds.

I use romaine, collards, chard, green or red leaf lettuces as wraps. I make a guacamole with avo, tomato, onion, etc. and put it inside the green.

At dinner, I have energy soup. There are lots of great recipes for it, I like to do tomato, green onion, dulse, cup of water, basil, soft tender greens (not collards...too bitter in energy soup) and sea salt. Top off with sesame seeds, and add crunchiness like carrots and radishes.

The more greens you eat, the more your body will crave them, in my experience.

I have a large green smoothie every morning after a pot of Yerba Mate. Keeps me full till early afternoon sometimes. Alternate kale, spinach or wild greens from the garden with pineapple, mango or banana. Like to keep it quite simple then a huge salad or soup in the evening. Also trying to stop snacking on so many raw cashews as would like to drop a few more pounds.
