I've read that Tibetan monks used to eat only the yolk unless they were doing extra physical work. i've made egg nog with hemp milk- not bad. I've also stirred one into a green smoothie. I'm not sure if I like them or not, honestly.
I read that also Erin but they boiled them which sounds better than raw to me.
like twice a year my body screams for eggs and I eat them scrambled and feel great.
Thanks RawZi, actually I'm interested in any taste or texture. Favorites or recommendations? Tasty and easy would be a bonus but not a requirement. I'm thinking about an egg or two per week as an experiment. Yes, other ingredients would preferably be vegan. I'm not ruling out a solo egg...just looking for interesting things to mix it into. ----tele
I went through a phase of eating about 4-5 raw egg yolks a day. One of my favorite recipes was to stir them into a bit of fresh cantaloupe juice or cantaloupe/watermelon juice. In fact it was so tasty, I named it a "velvet sunrise" because of the creamy texture, and the colors blended in a lovely way. I found the yolks to be more digestible if stirred into fruit juice (as opposed to a solid food) ... and I tried it in a lot of different types, and it was always creamy & good. Pomegranate juice mixed with egg yolks is also great; the yolks cut the tartness and make it more palatable. Raw yolks are also good in O.J. or grapefruit juice. I also enjoyed raw yolks mashed into avocado, but it needed a bit of apple cider vinegar to make it taste truly nice. I used to eat them because I was trying to get a natural food source of vitamin D since I don't think I get enough sun exposure. Now I'm just using a vegan vitamin D supplement (liquid spray), and trying to follow 80-10-10, so yolks are out.
Thanks for the replies so far everyone. I almost forgot one important related question: How critical should one be about choosing eggs for raw consumption? I'm assuming they should be local, free-range, organic etc. Anything else? Tips about how to prepare? ----tele
You should probably wash the shell well before cracking it to avoid getting bacteria in it...if it were me, I'd probably just add it to a smoothie. I'm a bit spartan right now, cuz I'm pretty new to raw:)
I eat my eggs in fresh squeezed orange juice. crack the egg and get rid of the white and then put a fork in the yolk and extract the inside of the sac. the sac isnt needed if your interested in why i can look it up i have the info somewhere but i do remember that if you give a cat the choice between the yolk without the sac and a yolk with the sac they choose the one without the sac!!.
Try the white in limeade. Make sure you blend it in the blender first though to make it all frothy. Limes, sweetener, and egg white - delicious. In this part of the world its taken with alcohol but I guess you want to omit that part.
make a raw mayo dressing.... 3 egg yolks, 1cup Extra virgin olive oil, and you can season however. you have to blend the yolks at high speed, and add the oil just a couple of drops at a time until each bit is emulsified, before you add the next bit of oil.
Someone else already mentioned then but I have drank raw egg yolks in fresh squeezed orange juice. I think I usually put 3 yolks in a large glass of juice and it tasted very good.
