Thanks so much for your ideas, ladies! :) i ended up doing a conglomeration of both recipes plus a few others i'd found online & created kreamy coconutty birthday goodness! i even had a request for the recipe from the birthday gal~ definitely a nice compliment & pleasant surprise! ~*~
i had forgotten how much i love banana coconut pie.. oh what a delight! mmmmm~ glad my birthday's coming up soon! :D

yeah, i'm so doing it for my birthday cake, too :) well... either that or blueberry kream pie... mmmmm the blueberries have been divine 'round these parts lately!! <3
