I've been trying to make a delicious raw creamy chocolate bar for some time now... and I run into the same problem where the sweetener will sink to the bottom and the rest of the bar is oily and unsweet.
How do I get a homogeneous, sweet, creamy raw chocolate bar?? I've heard about using lecithin... does any one have a good recipe?

I made this at Christmas and it was so popular with my SAD friends that it's now requested for birthdays and special occasions. Very sweet and rich and totally decadent. Maybe you can play with this recipe?
1 and 1/2 cup coconut oil (or cacao butter)
1 cup cacao powder
2 teaspoons vanilla
3/4 cup agave (or honey if you use it)
Optional: 2 cups buckwheat, soaked and dehydrated for a couple hours (makes candy taste like nestle's crunch bar)
Optional: 1/2 cup shredded coconut
Set container of coconut oil in warm water or in dehydrator until it becomes liquid. Add ingredients other than the optional ones and mix until very smooth. Then stir in optional ingredients if desired. Spread mixture on small cookie sheet or in a cake pan. Eitiher score before refrigerating or refrigerate until firm enough to cut into bars. Place the bars in a container and store in the freezer. Otherwise, I recommend keeping them in the refrigerator as they tend to melt more quickly than store bought candy.
My last batch contained organic clementine zest and the taste reminded me of that chocolate orange-shaped candy that you have to bang to get the slices to fall apart.

there's a brand that uses only dried mulberries as a sweetner and they're the best raw chocs I've ever had. Dried mulberries are Divine, they taste like chewy honey.
hey im just wondering if anyone has suggestions of names for a raw cafe. i plan on owning/starting up a cafe/restaurant in the future but i have no idea what would be a good name.
