Any quick tips or fast and easy meal suggestions.

Hello All,

I have been trying to do mostly a raw food diet for a few months now, while i have been about 80% successful...I am finding a hard time going completely raw because of lack of time. I work a salaried job where I put in way more than 40 hours and then school as well, can't forget raising a 7 year old on my own.

Does anyone have any tips to quick tasty meals that are easy to make and take along for the day????

You could make a really huge smoothie in the morning and take some of it in a mason jar with you. Do you have a kitchen at work? I like to keep a few salad type things in the fridge at work and make a salad or some nori rolls with sprouts, cucumber, tomato, avocado and greens. You could make a soup the night before and take that with some flax crackers or a tomato to chop up and put in later. Or the same with a salad, just add the dressing later. Or a chia pudding with grated apple, honey and cinnamon. Sometimes just grabbing a bunch of fruit is the easiest thing.

The pudding sounds awesome, sorry for being naive kinda new to this, can you tell me how to make it?

Yeah, I don't do it so much any more but is good if you are not into just fruit for a meal yet. Just grate or puree an apple or two with some honey and a bit of cinnamon and mix with 2-4tbsp of chia seeds and maybe 1/2 - 1cup of water depending on how thick or runny you would like it to be. The chia seeds absorb the liquid and make a gel like consistency. I'm not sure of the exact amounts, just play around with it. You could use any fruit really. Like berries or peaches. Apple and cinnamon just makes it kind of like apple pie.

grapes, apples, bananas, cherry tomatoes..any fruit you can eat easily. Im the laziest raw foodist ever. I enjoy my food in its whole form rather than blended now. I get to enjoy all the various textures that way, and it it just feels more authentic and natural. Most of what I eat is grab n go fruit. The most work I do in food prep is preparing my salads. I rarely make smoothies anymore. I will make applesauce for my daughter which is pretty effortless. Nuts are great occasionally.
When I started raw I thought I had to learn to make all these exotic recipes or else I wouldnt stay on it. Now that Im getting alot more comfortable with it I realize its totally unnecessary. A dehydrator is great for simple crunchy snacks, especially with kids, as I also have a 7 year old. I just received mine in the mail, and plan on making fruit leathers and dried fruits for her school lunch.

Fruit/seed/nut mix. Maybe some pumpkin seeds/raisins, almonds,blueberries, some agave syrup and maybe even a pinch of sea salt. Mix it all together and you've got a super energy buster and snack mix.

Also smoothies are a super idea, make a whole blender full and make sure you keep the unused portion cold or carry it around in a bag with one of those ice packs things. That should keep your smoothie cold.

Yeah, salads are good too. Make more than enough for dinner that night and set aside some for lunch the next day or something like that.
Carrot sticks/celery/cranberry mix...mm sounds great.

Thanks for the ideas, I eat so much salad that I am afraid I am going to get bored with it soon lol? I am sure after a while the lack of variety just becomes second nature and you dont think about it so much.

MACARONI AND CHEESE FOR YOU AND YOUR 7 YEAR OLD:
Macaroni and Cheese
Raw, vegan style

Noodles

2 zucchini, peeled

1. Use a mandoline with a medium julienned blade to make thick noodles, then chop them into 1 inch length pieces
2. Pour the sauce over them and let them sit for 5 minutes before serving.
3. Warm in the dehydrator or on the stove top if desired


Cheesy Sauce

2 cups of cashews, macadamias or Brazil nuts or 1 ½ cups hemp seeds
1 large carrot, chopped
2 Tbs. nutritional yeast
2 Tbs. light miso
1 tsp. Celtic sea salt
1 1/2 Tbs. sour lemon juice
½ cup water (or enough to blend)

1. Blend until smooth
2. Pour over the noodles or use as a dip
