An impressive but simple Raw chocolate dessert recipe needed......

We have been invited to a friends house on Tuesday (we haven't seen him for a while so my new raw lifestyle hasn't been introduced to him yet) and it really was the first time we have rsvp'ed with me saying i will be bringing along my own salad - we will explain on the night all about my raw reasons if he asks etc....

Anyhoo, he was really cool about the salad thing and we said we would bring dessert. I will make a normal dessert for everyone (not sure what yet....) but I also really want to turn up with a lush, amazing tasting simple RAW chocolate dessert too....That way I can have dessert too but mainly because I want to show the SAD eaters how eating RAW can be delicious too and that we are not missing out on anything............

SO, I was really hoping you guys could offer some help in this area......I have 2 days to do it (it is Sunday evening now)..........

I think you are in luck because I loooove chocolate. Yes I am can eat the beans even without sweetener :) Alright are you ready for this? This is a chocolate fudge that is sure to impress!

2 cups cashews or other creamy nut
1/4 cup raw cacao powder
1/4 cup raw carob powder
1/2 cup raw honey or agave
2 tsp vanilla extract or 1/2- tsp vanilla powder
pinch or two of sun dried sea salt

First processes the nuts until they are fine. Add the cacao,carob, vanilla, and sea salt and process again. With the food processor still running begin to pour the honey slowly in the "flour". It will begin to create a thick and very rich batter. Put the batter in a deep glass dish and place in the freezer until you are ready to cut it up and chow ! You could even sprinkle some cacao nibs and shredded coconut and then drizzle a bit of agave if you wanna be a fancy pants :) As always be creative and have fun with it!

That is awesome. Good luck with your party. Here is one of my favorite raw food deserts:

Put all ingredients into a bowl and mash together. If you want you can also form it into the size of snickers bars and freeze it in the freezer. Then you can have raw chocolate bars. Pretty sweet. This is one of my favorite things to make, it's so good for you and tastes amazing!

DRY INGREDIENTS
1 TBS Cacao Butter
Pinch of Sea Salt
1 Big Spoonful Cacao Nibs
1 Big Spoonful Cacao Powder
1 Small Spoonful Hemp Seed Powder
1 Small Spoonful Carob Powder
10-20 Raw Natures First Law Peanuts or any raw nuts
1 Small Spoonful Ground Flax Seeds
Small Handful of Goji Berries
1 Big Spoonful Dried Coconut Flakes

WET INGREDIENTS:
Cashew Butter (Spoonful)
Almond Butter (Spoonful)
Coconut Butter/Oil (Spoonful)
1TBS Agave
Spoonful Honey

I have something awesome...and very easy!

1 cup dates
1 cup walnuts (or pecan, almond, cashew - whatever)
1/4 cup cacao, cacoa, or carob
1/2 teaspn coconut oil (optional)

blend all in food processor until everything is blended, scoop out and I like to either form into a round cake or I put the mixture in a square tupperware and mold it with a spoon (push it down until it's all together) and then I tip it upside down on a plate and I have a lovely square!

I put that in the fridge to harden and then if you want frosting:

I used 1 avocado
a bit of agave
1 tspn vanilla extract
1/2 tspn coconut oil
1 tablespoon of cocao (i'm sure it would be great w/ carob as well)

I frosted the entire square of chocolate and then I put it in the freezer this time and after an hour or so, I cut them up into little squares, like brownies! I am sure you could make them larger or smaller - but they are really really good and it doesn't ttake long at all!

How about chocolate mousse? Thats easy to do and has passed the picking "Yuck its raw" test with my boyfriend.
Ripe avocado, cacao powder agave or dates and water. Rich and decadent. Also tastes great with coconut or nut butter stirred in.

I had hot chocolate this morning. First make a seed mylk, I used sesame and a few pine nuts. Then I put the mylk back in the blender, added a banana, a medjool date, pinch salt, mixed spice, 1 heaped teaspoon maca, 2 heaped teaspoons cacao powder. Add agave to taste. Blend until creamy. I also added a little lemon juice. I made sure it was nice and warm to drink and ate some shortbread with it. Yummy.
