I am looking for salad dressings that do not use oils, nuts, avocado, or very many seasonings/salt if any. Like, something along the lines of 811 type "dressings" if you can even call them that!
Maybe a universal veggie that I could use as a base for everything? Spinach might work, but I'm not sure. I just want a variety of yummy dressings to get everything to stick in my salads.

I love to use Mango these days. Before discovering how similar the texture is to fat based dressings, I never enjoyed my salads without fat. But now, I toss in a ripe mango, an orange, maybe some fresh basil or cilantro and some water and vitamix it all together. Deeeeelicious. And the texture and feel in my tummy is right. And yes, if you throw in some spinach, or a couple of sticks of celery you get a "saltier" taste. Of course, sometimes, I still add a couple of cloves of garlic - but it sounds like you want to be more "pure" than that.
Veggie salad dressings...
*blend cilantro and lemon as dressing over romaine, tomato, sprouts, olive, mushroom, carrot, radish/daikon
*blend basil and tomato as dressing over romaine, sprouts, tomato, olive, muchroom, carrot, radish/daikon
Fruit and veggie salad dressings...
*blend apple and lemon as dressing over kale, romaine, cucumber, sprouts, or mixed baby greens
*blend orange, lemon, and olive oil-optional over kale, baby tomato
*fruit salad, diced fruits over sweet greens like romaine, cucumber, zucchini
I don't know if you use miso- but it makes a creamy dressing that is excellent. You said you don't like nuts but are seeds ok? Chia seeds make an excellent thickener, and are great with mint and basil. Sesame seeds make a great dressing- like tahini.
Wonderful idea since alot of people need to try and stay away from some of the fats. I never thought about this. Are you using frozen peas? I do not find raw peas around unless just frozen.
