as we live in an addictive society, we can't "train" them to conserve, thus an alternative is necessary. us awesome people who use less and use nothing in combination with those who use sustainable solutions is key.
it is evident that history repeats itself. eventually, we will all be cavemen again. hopefully this time we don't discover fire for cooking or sharp tools for killing! :-)

My favourite greens right now are romaine lettuce and zucchini. I usually juice a full head of romaine and blend it with like 7 bananas. Love that drink!!! tried it today with boston lettuce, and it tasted even better but my juicer doesn't juice it as well as the romaine.
Did they teach anything about fermented foods? Like cabbage = sauerkraut or kim chee? Often recipes will call to cook, but I have had some wonderful raw sauerkraut...mmmm I want some right now. I gotta start making my own. $7-$12 for a 10-12 oz jar is expensive!

I've has some rather intense smoothies involving arugula, lol! Nothing could be worse in a smoothie than mustard greens, though- you'd think I would know better!!
When I was up in northern MI a week ago, I went into the woods by my childhood home and I picked some wild watercress from the stream. Oh my god, was it hot and peppery! I actually had to spit it out!

That watercress was so much more peppery than what I've bought at Whole Foods! Maybe the soil composition was different- I really don't remember it tasting that way as a kid.
My favorites are dinosaur kale and dandelion greens. Two totally different feelings, in my experience. The dinosaur kale is a super dark leafy green that makes me feel energized and very clear headed. Dandelion greens are incredible for detoxing and cleansing the body.
made a juice with watercress, dandelion, and celery... then put some green powder in there and garlic... oh my! if you can handle it, it's truly cleansing!!!
If you can break them down effeciently (via conscious chewing) and they are tender & relatively sweet then they are all good for you, high water content iceberg is my favourite. Whatever green is easiest on your digestion and best allows your body to get on with its task of renewal is ideal. Modern science only knows a small amount of the nutrients locked up in fruits and veg so use your instinct & senses on what is best....
I think kale and chard are at the top, but you also have to take season (and soil) into account. I had some chard in my garden in the spring that just sent me through the roof. Now, I just feel kinda nasty eating it (though the stalks are still amazing).
I'm presently finding grape leaves to really give me a zip . . .

I haven't tried yacon; I think it's still too sweet, technically. I believe stevia is truly the only natural sweetener that is not a form of sugar. When I add vanilla flavor and a little coconut oil to the stevia, it's kind of like maple...
