Give it to me Raw

I recently purchase a raw foods recipe book, and many of the dishes i want to make contain ingredients that i'm not familiar with!
Some of those are: a nori sheet, dulse, hiziki, cumin, wakame, pepita seeds, tamari, tahini, nutritional yeast, tumeric, herbamare, jicama (for a "french fries" recipe) and a teflex sheet. If anyone is familiar with any of these things, please reply!

nori sheet, dulse, hiziki, wakame = seaweeds
cumin, tumeric, herbamare = herbs
pepita = usually refers to pumpkin seeds
jicama = root veggie
teflex sheet = non-stick surface/paper that goes in a dehyrator

tamari is wheat-free soy sauce but it isn't raw. namu shoya is raw soy sauce but i haven't found a wheat-free one.
tahini is just ground sesame seeds, soo good.
nutritional yeast you can find at any health food store. don't think its raw but it gives dishes that cheesy flavor.

hope that helps!

Thanks Tuesday -- now that you mention it, yes I've seen tamari while looking for namu shoya on the soy products shelf, however the store I've been going to doesn't seem to carry it. Must find another place to shop I guess.

I've bought several different tahini, one was oily and had to be stirred in, another was dry and crumbly. I didn't really like any and am just not sure about tahini anymore! (laughs) Gotta learn how to use these.

tumeric is a rhizome with a deep yellow flesh its similar in look to ginger but with a different flavor profile. It's the ingredient in curry that gives it its yellow color. If you can't find it where you live you can substitute safflower (its cheap) or saffron (not cheap but has an excellent flavor). the flavor won't be the same but it'll work fine. You can find it in any south asian (indian) or caribbean market since both ethnic groups use it heavily. I use it tons and as far as raw dishes go you can use it in breads, soups, juices, specialty ice cream and most importantly curries.

hiziki and wakame are sea veggies. You can substitute it for any other sea veggie you can find. You can usually find it in wholefoods or specialty stores or even an asian market. If you've never eaten a sea veggie don't go out and buy pounds of it or find your self on a wholesale website buying it in bulk. DO NOT DO IT. you should try just a little bit to see if you can handle the flavor, smell and texture of it. If you taste it and fall in love then do what you want. Sea veggies are one of those love or hate things.

Hi Sheryl what kinda of curries do you prepare?

Reply to This

I like all curries except for curry with lemon or lime.

My curry typically includes: turmeric, ginger, fenugreek, cumin, coriander, all spice (pimento seeds), scotch bonnet peppers (optional - if you can't stand a bit a heat),parsley, garlic, cilantro and a little culantro (aka recao ), onions/scallions (blended into a liquid), rubbed thyme, sea salt and a few other spices i'd never tell a perfect stranger..even so you can make a really good curry without them. If it's a special occasion i'll add saffron to it...i don't recommend adding it for every day use unless you don't mind spending the $$$..then again its no more expensive than eating raw cacao, durian or green coconuts everyday.

Curry with mature coconut mylk is...how should i describe it...........MAGIC

Enjoy!

Good questions!

Nori sheet, dulse, wakame, and I think hiziki are all various seaweeds. You can find the dried seaweeds in packages at the health food stores. They will all be together on the same shelf pretty much (at least they are in mine.)

Cumin, tumeric are spices. Just look in the spice department.

Jicama is a root.. vegetable? I don't know how to categorize this but it's found in the fresh produce section (do google images for jicama so you know what you're looking for). Peel before eating!

nutritional yeast, I've found at my organic food store. In cans. Unsure what its purpose is for. I figured it wasn't raw?

The rest I'm not too sure about.

Nori is a kind of seaweed. Usually the sheets are used to make raw sushi. Dulse and hiziki are also seaweed types you can probably find at your local health food store. Cumin in a spice (it's the primary flavor in most hummus, just so you can get an idea of the taste). Tamari is just a name for soy sauce. You'll want to do nama shou if any soy sauce at all. Tahini is a seed butter made from sesame seeds, I'm not a fan of it alone personally but it's good in recipes and some people love it on it's own. Nutritional yeast is used for imitation cheese primarily in the raw food world. I know people who love to eat it on popcorn (not raw foodies obviously). Tumeric is a spice used in curry powder (that's what give it that yellow color). Jicama is a white crunchy root veggie. It has a very mild taste. I know all the lingo of raw foods can totally be overwhelming at first but you'll be surprised how quickly you get acclimated. Have fun making your new recipes! :)

Larabars are 100% raw (well, most of them) and they're really good. Think Organic bars are raw and organic. You'll get twice the Larabar for less money, but they're both really good.

Please share your easy desserts. I've finally gone 100% raw, but I'm having a hard time staying way from candy... (I haven't caved yet) I'm looking for desserts that don't need nuts as I'd like to eat them after dinner. Thanks!
