I can't find good instructions on the web for making coconut cream. It sounds like you just put the coconut meat through a Green Star juicer and add lime and honey to preserve it. Is that right? Does anyone know? How much lime juice and honey are the right amount to add?
im not sure about preserving it (i always eat it right there) but yes you can put it through a juicer. i have a blendtec so i can just run it through and it will grind everything up together into a cream consistency. yum!
so can I substitute coconut meat in the Vitamix for Coconut Butter? sorry if this is a silly question, just so new to all this and thank you in advance for any suggestions! ;o)
Denise, it depends what the recipe is. Coconut butter is definitely different that just the meat - the butter is the oil extracted from the coconut meat. So in many recipes substituting meat for oil/butter will not get you the desired result :) Fine if it's just a smoothie or something, but often the butter is used as a fatty semi-solid base for recipes.
I put fresh coconut meat through the juicer, that's my recipe!
No need to preserve it, just put it in the fridge and it solidifies, you can re whip it by blending it. Just add whatever flavouring you like, but the less water the better as it doesn't mix with the cream.
