Does anyone have recommendations for a good book that breaks down the vitamin and minerals of juicing? For instance, what do you actually get from spinach, apple, kale juice?
I just found "The Juiceman's power of juicing" by Jay Kordich, in value village for $2 so I picked it up. It's old and outdated but still has a lot of info on each vegetable/fruit and what vitamins and minerals they have. He also lists a bunch of recipes designed for specific ailments. It's definitely worth the read if you can find it cheap like I did.
