The new diet that is changing the world ... A High Kale, low nuts daily intake

So, I was contemplating on what I eat , what others eat and bless the ones who eat "Full Menu". High fiber, low fat, High protein, low stress - etc etc etc.

Today - I came up with a new way of eating that will change the world as we know it. High Kale, low seeds and nuts daily intake.

I have never heard of ANYONE or any MEDICAL type saying to someone else .. "Wow - you are eating way too many leafy greens - better cut down on those" and I have also never heard anyone in earnest try to figure out how they can get MORE seeds and nuts in their daily intake. So ... this was the birth of .. the new way of eating ...

High Kale, low nuts.

That is some nice kale you got there. Have you made kale chips? I keep thinking about making some with blue manna sprinkled on top. When I smell blue manna, it smells like chips to me.

man, that is some serious kale!! i have never seen it here to buy in the vege shops, so the only kale i get is my own, and i keep picking the leaves young for my smoothies so they never get that big :)

Side effects of too many greens include: Outrageous abundance of energy, suspicously high bone density, untrustworthy lack of BO.
But I do prefer spinach to kale. And collard greens are unbeatable for wrapping... But I SHOULD learn to incorporate more kale.

Debbie these kale chips are soooooo good!!! Just scroll down, or click on Chrissy's link.

These chips are very hard to resist and you can't eat just one! You may need to double the recipe because they won't last very long. I sometimes eat a large bowl full as a meal and am completely satisfied.

This works best with Lacinato or Dinosaur Kale.

Chrissy's Goddess Chips

2 bunches kale, broken into large pieces by hand

Dressing:
3/4 c sesame tahini
1/2 c apple cider vinegar
1/2 c water ~ more if needed
1/4 cup fresh parsley
1/4 cup nama shoyu
2 scallions
1 clove garlic
1 lemon, juiced
1/4 t. sea salt

Place kale in a large mixing bowl. Combine all ingredients in a blender and blend until smooth to get a thick consistency. You may have to add more water. Pour over kale and mix thoroughly with your hands to coat the kale. You want this mixture to be really glued onto the kale.

Place kale onto a Teflex sheet, on top of a mesh dehydrator screen, and dehydrate for 4 hours @ 110 degrees. You'll need to use two trays. Rotate kale occasionally to dry uniformly.

The first time I made these I stood over the dehydrator and ate the chips right from the Teflex sheet. Enjoy!

I know what you mean about avoiding certain ingredients. I just cut and pasted Chrissy's chips for starters. The first time I made this in the house, we all smelled like vinegar for days! I liked it, but nobody else would come near me. I reduce the amount of vinegar, onion and garlic from the original recipe, but the family has still banished my dehydrator to the garage. I've never had nama shoyu, I use Braggs. I'm sure you can go without the vinegar and it would still taste good. I use a little vinegar to help break down the kale's cell walls, but with the dehydrator, wilting it first, it probably could go without vinegar all together.

So, when I actually took an inventory of what goes into my kale chips they're quite different from the original. I just made another batch just now because,
1. with all this talk on KarmaFree Kale Chips site about kale chips (just the name makes me drool) I was really craving them right now and happened to have all the ingredients, and
2. because I wanted to see exactly how much a glug, splash or dollup might come out to be.
Here is a recipe for:
Rawbin's Kale Chips:
1/4 tsp mustard powder
juice from one half lime (I usually have lime around, not lemon)
1/2 cup water
1/4 cup of extra virgin olive oil
3/4 cup sesame tahini
fist full of onion greens from my garden (I can find these year round)
1/4 garlic clove
2 Tablespoons raw apple cider vinegar
1/4 cup of Braggs liquid amino acids
1/4 tspn sea salt
sometimes 2 TBS nutritional yeast

I throw this into the blender until it's creamy and tastes good straight from the spoon. It should be almost thin enough to pour like a dressing. I have a weak blender so I usually blend everything smooth before I add the tahini last.
I pour it into a big bowl and then I work it into the nooks and crannies of the kale and spread it out onto the dehydrator shelves.

I am a new found lover of kale! I started using it in various green smoothie drinks I've been fiddling with and I absolutley love it! I've been ramping up to start a juice feasting session(which I'm starting today), so I've been drinking 4 large smoothies a day and manage to get in a large bunch of kale, some spinach, a bunch of celery and at least one cucumber and assorted other greens. I have more energy than I can believe....it is great...I am looking forward to a new level of health and wellness with dark geeny leafys to thank for that! :) :)

High kale, low nuts? I'd be writhing on the floor in pain. Kale does not agree with my stomach. Replace the kale with some other greens, though, and I'd be good to go.

WOW! Thats a mad amount of Kale! I love it with some sprouted quinoa, chopped tomato, sea salt, and olive oil.
It's not always easy to get all my greens in...Im usually on the run. Any other Kale ideas??

I have never dried them myself, but in France and Italy you can buy them already dried (at what temperature I don't know). It was awhile since I ate them (before I went raw).
