What do YOU do with your empty young Thai coconut shells?
Bloomin' Coconuts!I just discovered that a bulb that I stashed into dirt ages ago has weathered the fall, the frost, the freeze, and then finally the thaw. Something is growing out of my young Thai coconut shell. I'm not sure what, but as it grows, I'll keep you posted. I think it will be yellow.

The young thai coconut I had for my easter dessert was a simple pudding that tasted like tapiocca pudding. I blended the coconut meat, half a vanilla bean, some coconut water and some agave nectar. I was inspired by Rawdorable(ShannonMarie)'s latest blog.

I just use a small hammer and a large cheap kitchen knife. I hold the coconut with the knife in place and tap at the back of the knife with the hammer. After a few taps, it sort of splits open in the right spot,just like magic! In case you've never opened one before, here are two links I've found helpful.
