Going back to my old college professor who was asked, "When do you know you're a writer?" and his answer was "When you've written a million words." The lesson being, if you just do it, and keep doing it, you'll be it. No need in throwing money at somebody to give you a degree to make it "real". But then I'm counter culture methinks.
Check out books, make food, you can call yourself a raw chef in a couple months!
I'm with yardsnacker..You don't need a degree or a piece of paper to prove that things are real..I decided I wanted to be a raw chef and I am..Save your 2 grand for buying a dehydrator and vita mix. I have been making food for people without the degree and all I can say is your either good at it or your not. If you're good at it people will come and they aren't going to care if you have a degree if your food tastes good..Experiment have fun and think about how you can make the cooked dishes you used to eat in raw form it's creative and fun..
buy some RAW cookbooks and start playing around in the kitchen..the label of Chef, is just a label..if you feel like a chef in your heart, you are! It's all about experimenting and playing with food!!! PEace,

Me too! I think I am learning so much just playing in my kitchen but I know there are probably a lot of "secrets" that i just might not stumble upon. The cool thing for me is I am just starting to come up with things on my own...but i gotta say, mess-ups can be kinda expensive...I try to eat them anyway but some are too weird ;-)
Also, eventually i want to have a cafe/health food store and having some sort of certificate may make funding easier to come by.
I think i'm going to see if i can just start volunteering at the various restaurants in NYC...If there are any chefs on here that would like a responsible and hard-working FREE assistant 1-2 days/week, let me know!

We get a fair number of applicants, and it varies all the time.
It is absolutely NOT required that someone be raw for any length of time. What is required is that someone be truly open and coachable.
