A lil' help with the Psyllium powder, please? (desserts)

What's the rule of thumb for using the stuff? I'd like to make a pie, and was thinking of using the powder for thickener. Any advice?

I use psyllium in my whipped cream recipe as follows:

Here is an amazing "whipped cream" recipe... I served it last night to my sweetie on top a raw dessert. He loved it!


Whipped Cream (from Carmella at Sunny Raw Kitchen)
1 cup cashews
1 cup + 2 tablespoons fresh coconut milk (simply blend 1 part dried coconut with 3 parts water in high speed blender) (I used 1 cup dried coconut, and 1 cup water blended in the Vita Mix)
1/8 - 1/4 cup honey or agave (depending on how sweet you like it)
1 tablespoon lemon juice
1 tablespoon vanilla
Pinch of salt
1 tablespoon lecithin* (I used 4 psyillum husk capsules broken open)


To make the Whipped Cream:
Blend all ingredients except psyillum smooth. Add psyillum and blend until thoroughly mixed. Set in fridge for about 1 hr.

Very MINT dreamy.
Ingredients

* BROWNIES, (adapted from Jennifer Cornbleet's recipe)
* 4 cups walnuts, unsoaked
* 16 medjool dates, unsoaked
* 1 cup carob powder
* 5 sprigs fresh mint
* ½ teaspoon sea salt

* STRAWBERRY TOPPING
* 1½ pounds strawberries, sliced
* 1 tablespoon agave nectar
* 3 fresh mint leaves, (for garnish)

FOR BROWNIES: Wash mint and leave on counter overnight to dry. Or put in dehydrator at 110° for 2 hours (or more). In a food processor, chop 1 cup of the walnuts and set aside. Process remaining walnuts and salt until finely ground. Add dried mint (mint should crumble from sprigs) and dates and process until mixture sticks together. Add carob powder and water. Form mixture in two squares. Press reserved chopped walnuts into tops of brownies. Cut into 1-inch squares. Let chill in refrigerator for 2 hours.

FOR COCONUT CREAM: See recipe above!

FOR STRAWBERRIES: Add agave nectar to the strawberries

TO ASSEMBLE: In bottom of trifle bowl, place brownie squares, top with coconut cream, then sliced strawberries. Repeat with remaining brownies, cream and strawberries. Put bowl in refrigerator to chill for 1 hour. Garnish with mint leaves.

Hi Lizz, I haven't tried yacon; I think it's still too sweet, technically. I believe stevia is truly the only natural sweetener that is not a form of sugar. When I add vanilla flavor and a little coconut oil to the stevia, it's kind of like maple...
