Give it to me Raw

I'm a big fan of Kombucha. I would love it if some Kombucha drinkers and makers could share their best batch recipes with us. Such as, kind of tea they used, if they used the controversial sugar, organic sugar, or perhaps even honey (a big no, no apparently). Some people even add other natural flavouring.

For my batch I like to use organic white tea with an organic or raw sugar. This works very well for me, but I think it would be fun to experiment with other "flavours" a bit.

MMMMMM i love Komucha too. I use about 3 or 4 black tea bags and about 4 green tea bags. I have used white table sugar, but right now i've been using organic raw cane sugar. I boil about a quart of water and then add almost a cup of sugar. I stir it a bit to dissolve it and then turn off the heat and add the tea bags. I cover it and let it cool completely before adding the scoby. This recipe turns out great for me. It turns into a slightly tart drink. It's yummy. I do let it ferment for a about 4 or 5 days. I think the longer it ferments the more it tastes like vinegar. Some recipes i have read don't use as much sugar as this one, but it's how i was taught, so that's what i do. I've never added any flavors. I've read they can mess up the fermentation. I would like to try though, if anyone knows how to do it.

I let mine ferment 7-9 days usually and I don't think it tastes vinagery at all. It's like pop to me. My first sip of it was "woah, all I can taste is apple cider vinager!" and I had to sip it slowly to drink it. The second day it was better. And ever since then, I don't think I can taste that vinagery feel at all. It's SOOOO good. I gulp it down now. I'm not sure if it was my tastebuds changing or if the batch changed.

I would love to try it, but they don't sell it in my area.

if homemade kombucha tastes anything like synergy, i don't want to try it. synergy tastes like pure vinegar, guava or no guava. i want to like it but i can't.

I finally tried the Synergy kombucha, guava!!! Just like ya'll recommended. It was good, but took me a while to drink.

I love Synergy Kombucha!! I change favorites every so often, right now I love grape!! Before that was Strawberry and Gingerade! YUM!

the synergy kombucha makes me turn bright red! I think it's because of the .5 percent alcohol due to fermentation..the taste did surprise me at first for some reason I was expecting something sweet..like regular tea. tastes just like sparkling water with fruit. Speaking of that have u guys ever tried mixing fresh pineapple juice with sparkling water? soo GOOD!

If you opened my refrigerator door right now, the top shelf is filled with nothing but bottles of Synergy kombucha.

Oh, and a jar of raw pickles. Forgot about the pickles.

I should re-label the top shelf my "fermented foods" level.

When I bottle my homade kombucha I flavor it. One of my favorite is adding goji berries (yum). Sometimes I add lemon, orange, ginger, grapefruit or strawberries. When I have extra scoby I blend one up and put it in a jar in fridge and use as a face mask. My skin is sooo soft afterward. I love kombuca..

Ya, just the scoby. I just apply it like a clay mask. It is a bit messy. You might want to spot test it first, to make sure you dont have a reaction. Try it..

It's actually surprisingly easy once you get the hang of it. No machete required. Shave off the husk at the pointed top close to the shell. Then poke the point of a knife in about 2 or 3 cm out from the centre and wiggle it about until it pierces ...
